- 6 tablespoons canola oil
- 1 cup cold water (original recipe), coffee (next inspiration), milk (later inspiration), or 3/4 cup water and 1/4 cup rum (latest inspiration)
Tart Cherry Lattice Pie

Preheat oven to 400°. In a large bowl, combine sugar and flour; stir in cherries and extract
- 1-1/3 cups sugar
- 1/3 cup all-purpose flour
- 4 cups fresh or frozen pitted tart cherries, thawed and drained
- 1/4 teaspoon almond extract
- Pastry for double-crust pie (9 inches)

- 1/2 Head Iceberg Lettuce ~ torn
- 1 Bunch Romaine Lettuce ~ torn
- 2 Stalks of Celery ~ Chopped
- 1 Cup Mandarin Oranges ~ drained
- TOPPING:
- 1/3 Cup Sliced Almonds
- 2 TBSP Sugar
- DRESSING:
- 1/3 Cup Vegetable Oil
- 3 TBSP Sugar
- 3 TBSP White or Rice Vinegar
- 1 TBSP Fresh Parsley - minced
- Dash of Salt & Pepper

- 1/2 cups Butter, Softened
- 1 cup Granulated Sugar
- 1/2 teaspoons Vanilla Extract
- 1 whole Egg
- 1 teaspoon Lemon Zest
- 1 Tablespoon Fresh Lemon Juice

- 1/4 teaspoons Baking Powder
- 1/8 teaspoons Baking Soda

Chile Relleno Chicken Soup

Tina's Pot Roast

- 1 TBSP Canola Oil
- 1 boneless Beef Chuck Roast (3 lbs)
- 1.5 Cups water
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1 envelope brown gravy mix
- 1 envelope Italian salad dressing mix
- 1 envelope onion soup mix
- 3 lbs medium potatoes (about 9) peeled & quartered
- 1 lb medium carrots, cut into 2 inch pieces
Salmon with Fennel Baked in Parchment

Preheat oven to 350°F (175°C) Lay down a square of parchment paper on a flat surface
- 1 fennel bulb, sliced paper thin (a mandoline helps for this)
- 4 6-ounce portions of fresh salmon fillets (skinless is best)
- Kosher salt
- Freshly ground black pepper
- Lemon juice (to taste)
- 12 very thin slices of whole lemon (from 1 to 2 lemons)
- Several sprigs of fresh fennel fronds
- 2 Tbsp butter or Olive Oil
- 4 12x18-inch pieces of parchment paper (can sub aluminum foil if you don't have parchment paper)
