Chicken Breast stuffed with Spinach and Mozz Cheese

- Cooking time: 40 minutes
- 1 lb boneless, skinless chicken breasts
- 4 oz mozzarella cheese, shredded (you can use up to 6 oz)
- 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
- 2 tbsp olive oil
- 2 tbsp Good Seasons Italian Dressing mix
- 1 tbsp breadcrumbs (I use Italian style)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Lots of toothpicks

1. Clean chicken breasts and place them in a 9×13 glass baking dish
- 4 boneless skinless chicken breasts
- 1 1/2 c. mushrooms
- 1/2 c. fresh lemon juice
- 1/2 c. fresh dill, chopped
- 2-3 garlic cloves
- 1/4 c. dijon mustard
- 1 T. olive oil
- 1/2 T. paprika
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
