- 1/2 Cup frozen Strawberries ( or berry of your choice )
- 1/2 Cup fat-free or low-fat Ricotta Cheese

Double Raspberry Bars

1. Line a 13x9x2-inch baking pan with a double thickness of foil
- Nonstick cooking spray
- 2 1/2 cups all-purpose flour
- 2/3 cup granulated sugar
- 1/2 tsp. salt
- 1 cup unsalted butter, softened and cut up
- 1/2 cup regular rolled oats
- 1/2 cup chopped pecans
- 1/4 cup packed brown sugar
- 2 Tbsp. unsalted butter, softened
- 3/4 cup raspberry preserves
- 3/4 cup fresh raspberries
- 2 tsp. lemon juice

ESPRESSO SWIRL CHEESECAKES WITH HAZELNUT CRUST

Finish a sweet Valentine’s Day dinner with a cheesecake-for-two
- 3/4 cup butter, softened
- 1/4 cup sugar
- 1 1/4 cups pastry flour (or 3/4 cup cake flour plus 1/2 cup all-purpose flour)
- 3/4 cup ground, toasted hazelnuts
- Four 8-oz. pkg. cream cheese, softened
- 1 1/4 cups sugar
- 4 eggs
- 2 tsp. vanilla
- 1/3 cup half-and-half or light cream
- 1/2 cup all-purpose flour
- 1 Tbsp. instant espresso powder mixed with 2 Tbsp. boiling water
- 6 oz. semisweet chocolate pieces, melted and cooled
Healthy and Easy Ginger and Garlic Green Beans

Boil large pot of water. Add beans and cook for 3 minutes
- 1/4 cup grated ginger
- 6 cloves garlic, minced or grated
- 2 tbsp oil
- 2 lbs green beans, ends cut off
- Salt to taste

- 1 box Betty Crocker® fudge brownie mix
- Water, vegetable oil and eggs as called for on brownie mix box
- 1 cup semisweet chocolate chips
- 1 bag (14 oz) caramels, unwrapped
- 1/4 cup butter or margarine
- 1 tablespoon milk
- 1 cup pretzels, coarsely crushed
- 1/3 cup toffee bits

- 2 cups Reduced-Fat Cheddar Cheese - shredded (set aside 1/2 cup for topping)

- 6 oz Baked Ham - cubed

- 6 oz Turkey, Chicken or Beef - cooked and cubed
- 1/2 Onion - chopped
- 1 pkg frozen chopped Broccoli, partially thawed
- 1 Tomato - finely chopped
- 1 Stalk Celery - finely chopped
- 1 Carrot - finely chopped
- 2 Chicken or Beef Bouillon cubes -dissolved in 1/2 C. water
- 1/4 tsp Sage
- Dash garlic powder and pepper
- 1 Cup Fresh Caulifower florets
- 1 tsp fat free Cream Cheese
- 1 TBSP non fat Milk
- 2 TBSP Parmesan Cheese
- Paprika - to taste
