German chocolate cake Inside-out

Sheer chocolate-coconut-dulce-de-leche-almond-crunchy-but-moist heaven
- For the cake:
- 2 c. sugar
- 1-3/4 c. all purpose flour
- 3/4 c. natural unsweetened cocoa
- 1-1/2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1 tsp. kosher salt
- 2 lg. eggs
- 1 c. whole milk
- 1/2 c. vegetable oil
- 2 tsp. vanilla
- 1 c. boiling water
- For the filling:
- 7 oz. sweetened shredded coconut (about 2 c.)
- 4 oz. chopped almonds (about 1 c.)
- 14 -oz. can sweetened condensed milk
- 1 T vanilla
- 1/4-1/2 c. heavy cream
- For the topping:
- 2-1/2 sticks unsalted butter (1-1/4 c.)
- 10 oz. semisweet chocolate
- 3 T light corn syrup
Rhubarb Sorbet

Also makes great popsicles! Just pour mixture into popsicle molds and freeze
- 3 1/2 cups of chopped fresh rhubarb (4-5 stalks)
- 2 1/2 cups of water
- 1 2/3 cups of sugar
- 1/4 teaspoon of salt
- 2 teaspoons of orange zest
- 2 teaspoons of chopped fresh ginger
- 2 tablespoons of corn syrup
Easy and Fast Vegetable Stock

1. Combine all ingredients in a saucepan or small stockpot with 6 cups water, and bring to a boil
- 2 carrots, peeled and cut into chunks
- 1 unpeeled onion, quartered
- 1 potato, washed and cut into chunks
- 1 celery stalk, trimmed and chopped
- 2 or 3 unpeeled cloves garlic
- 10 to 20 parsley stems, or stems and leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon soy sauce, or to taste
- Pinch of salt and pepper.
Grekiska fetaostbiffar med ugnsrostade rotfrukter

Finhacka basilikan och riv vitlöken
- 1 kilo nötfärs (alt. blandfärs)
- 1 knippe färsk basilika (alt. 1 msk torkad)
- 150 gram fetaost
- 2 vitlöksklyftor
- 1/2 dl vatten
- 1 dl matlagningsyoghurt
- 2 tsk potatismjöl
- 1 tsk nystött svartpeppar
- 1 tsk salt
Double chocolate babka

Babka-mania symptoms include twitching at the sight of it and arguing about what it should contain
- 1 sachet fast-action yeast
- 375 g strong white flour
- 75 g sour cream (or silken tofu)
- 100 g light soft brown sugar
- 3 egg yolks
- 3 tsp vanilla extract
- 100 g melted butter (or sunflower oil)
- 50 g cocoa powder
- 3/4 tsp salt
- 2 plain Ryvita or crackers (about 20g)
- 3/4 tsp cinnamon
- 250 g milk or dark chocolate, melted
- 1 egg white, beaten
Fetaostfyllda färsbiffar med tzatsiki och chilitomat

Grillade oxfärsbiffar med fetaost som serveras med tzatsiki och chilitomat
- 600 g oxfärs
- 1 burk tärnad fetaost
- 1 dl mjölk
- 1 st grovt hackad lök
- salt och peppar
- 1 st gurka
- 250 g matlagningsyoghurt
- 0.5 msk salt
- 1 st riven vitlöksklyfta
- 3 st tomater
- 2 dl tomatketchup
- 0.5 msk sambal olek
- 2 msk socker
- 4 st pitabröd
- sallad
- rödlök skuren i ringar
One-Hour Vegetable Stock

1. Put oil in a deep skillet, broad saucepan or casserole, and turn heat to medium-high
- 2 tablespoons extra virgin olive oil
- 2 carrots, peeled and sliced
- 1 unpeeled onion, quartered
- 1 potato, washed and sliced
- 1 celery stalk, trimmed and chopped
- 2 or 3 unpeeled cloves garlic
- 5 to 10 medium white mushrooms, trimmed and halved or sliced
- 10 or 20 parsley stems, or stems and leaves
- Salt and pepper
- 2 tablespoons soy sauce.
Grillad gravlax med potatis- och spenatpaj

En rätt som passar lika bra på buffén som till lunchen
- 3 st plattor fryst smördeg
- 1 st äggula
- 300 g färskpotatis
- 1 knippe rädisor
- 50 g smör eller margarin
- 2 st finhackade schalottenlökar
- 200 g färsk, sköljd spenat
- salt
- peppar
- 2 dl kesella
- 1 pkt saffran (0,5 g)
- 1 st pressad citron
- 4 bitar gravad lax (à 120 g)
Melitzanosalata (Eggplant Salad)

- 1 medium to large Italian eggplant
- 1 large clove of garlic
- extra virgin olive oil
- coarse sea salt to taste
- 2 tbsp of chopped flat-leaf parsley
- squeeze of lemon juice (prevents the eggplant from turning brown)
Roasted Vegetable Stock

1. Heat oven to 450 degrees
- 1/3 cup extra virgin olive oil
- 2 trimmed and well-washed leeks, cut in chunks (or 2 large unpeeled onions, quartered)
- 4 carrots, peeled and cut in chunks
- 2 celery stalks, trimmed and cut in chunks
- 1 parsnip, peeled and cut in chunks (optional)
- 2 potatoes, washed and quartered
- 6 cloves garlic
- 15 to 20 medium white mushrooms, trimmed and halved
- 1/4 cup soy sauce
- 10 sprigs fresh parsley
- 2 or 3 sprigs fresh thyme
- 10 peppercorns
- 1/2 cup white wine
- Salt and pepper to taste.
