Lemon Curd: In a saucepan, whisk together water, sugar, cornstarch, and salt until cornstarch is dissolved
- Lemon Curd:
- 1/4 cup cold water
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 1/4 cup fresh lemon juice
- 2 teaspoons finely grated lemon zest
- Pinch of salt
- 1/2 tablespoon butter
- Cake:
- 2 3/4 cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup butter, softened
- 2 cups sugar
- 3 eggs
- 3/4 cup buttermilk
- 1 cup coconut milk (canned or fresh)
- 2 teaspoons grated lemon zest (about 2 lemons)
- 2 teaspoons vanilla extract (or 1 teaspoon lemon extract)
- 1 cup lemon curd
- 1/3 cup dried cranberries, soaked in 1/4 cup bourbon or brandy, drained
- Whipped Cream Frosting:
- 1 (8 ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 cups whipping cream
- 2 cups sweetened flaked coconut (toasted, if desired)
