Mint Chocolate Ice Cream

If using a mixer,whip the topping until stiff
- 16 oz container nondairy whipped topping(or heavy cream for dairy)
- 3 egg yolks
- 3/4 cup confectioners sugar
- 1/2 cup coconut milk(or whole milk for dairy)
- 1/2 tsp mint extract
- a few drops green food coloring
- 1 9 oz bag quality chocolate chips(not chocolate flavored chips)
Butternut Squash with Grapes and Shallots

preheat oven to 450. Peel squash
- 1-2 large butternut squash
- 1 cup red grapes
- 5-6 shallots,peeled
- 3 Tbs honey
- 4 Tbs oil
- 1 tsp salt
- 1/4 tsp black pepper

- 2 McIntosh apples
- 2 Bartlett pears
- 4 long Hungarian plums
- 2 tsp lemon juice
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/4 cup crystallized or sugared ginger pieces,finely chopped
- 1/2 cup good quality choc chips
- 1 9 oz bag Crispy Crumbs

Mix the ingred. for the marinade in a bowl or pulse in a food processor
- zucchini
- yellow squash
- baby carrots
- miniature peppers
- red potatoes
- red onions

- mini ears of corn
- Marinade;
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 onion red onion,finely chopped
- 1 TBS chopped fresh basil or 1 tsp dried basil
- 1/4 tsp dried thyme
- 2 cloves garlic,finely minced
- 1/2 tsp kosher salt
- 1/2 tsp pepper

- 1/4 cup flour
- 1/4 tsp paprika
- 1/8 tsp pepper
- 1/4 tsp salt
- 1 chicken cut into 1/8's
- SAUCE
- 2 ripe plums or nectarines or peaches diced
- 8 oz tomato sauce
- 1 cup brown sugar
- 1/2 cup soy sauce
- juice of 1 lemon,about 3 Tbs
- Tbs brown rice vinegar,or Sake or Gin

- 2 Tbs coffee

- 1 1/2 cup flour
- vanilla sugar
- oil for smearing
- 1 beaten egg for egg wash
- 3 medium loaf pans
- if you like a lot of filling and crumbs, just add more of the ingredients but not double the recipe
