BAKED ZUCCHINI FRIES

Preheat oven to 425°. Arrange an oven rack in the lower third of the oven and a second one in the center
- 1 1/2 pounds zucchini, trimmed
- 1/2 cup all-purpose flour
- 2 tsp. kosher salt, divided
- 3/4 tsp. ground black pepper, divided
- 3 large eggs
- 1 1/2 cups plain bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. chopped dill (optional)

- Chocolate Cake Recipe
- Make one 8 inch two layer chocolate cake.
- 3/4 Tablespoon Baking Soda
- 1/3 Cup Butter
- 2 3/4 Teaspoons Buttermilk
- 1/4 Cup Cocoa
- 1 3/4 Cup Cake Flour
- 1 1/2 Teaspoon Salt
- 1/3 Cup Crisco Shortening
- 1 3/4 Cup Granulated Sugar
- 1 1/2 Cups Buttermilk Divided
- 3 Whole Eggs
- Chocolate Fudge Icing recipe
- 1 Tablespoon light corn syrup
- 1/3 Cup Butter
- 2 Drops Vanilla
- 5 Tablespoons Simple Syrup Divided (recipe follows)
- 1/3 Cup Chocolate Fudge Base (recipe follows)
- 4 Cups Powdered Sugar
- 3 Tablespoons Water
- Simple Syrup recipe
- 1 Tablespoon Light Corn Syrup
- 2 1/2 Tablespoons Hot Water
- 2 1/2 Tablespoons Granulated Sugar
- In a sauce pan combine corn syrup, hot water and sugar. Heat and stir until sugar dissolves. Let cool to room temperature before using.
- MAKES APPROXIMATELY 6 TABLESPOONS
- Chocolate Fudge Base recipe
- 7 1/2 Tablespoons Cocoa
- 1 Tablespoon Sunflower Seed Oil
- 1 3/4 Tablespoons Crisco Shortening
- 2 1/2 Teaspoons Light Corn Syrup
- 2 Drops Vanilla
- Add cocoa, sunflower seed oil, shortening, corn syrup and vanilla to mixing bowl. Mix at low speed until smooth.
- Makes 1/3 cup

- 1 Cup Butter
- 1/2 Cup Crisco Shortening
- 3 Cups Powdered Sugar
- 1/2 Teaspoon Vanilla
- 1/4 Teaspoon Salt

Chocolate Cupcakes with Mint Chocolate Chip Frosting

Make the cupcakes: Preheat oven to 375F degrees
- Chocolate Cupcakes
- 1 cup water
- 1/2 cup unsweetened cocoa powder
- 1 and 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened to room temperature
- 1 cup sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- Mint Chocolate Chip Frosting
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 3-4 cups powdered (confectioners') sugar
- 2 Tablespoons heavy cream (see note below about substitutions)
- 1/4 teaspoon peppermint extract (or more, see recipe instructions)
- 2 drops green food dye
- pinch of salt, as needed
- 2/3 cup mini chocolate chips
Cinnamon Roll or Raisin Bread Dough

- 1 Cup Crisco
- 1 Cup Boiling Water (Pour over Crisco)
- 1 1/2 tsp salt
- 2 beaten eggs
- 3/4 cup sugar
- Soften 2 packets yeast in 1 cup warm water
- Stir in 6 cups unsifted flour
- This is a batter type consistency
Sauteed Portobello Mushrooms
