Banana Yogurt Parfait with Maple Oat Topping

1. Heat a nonstick skillet over medium heat
- 6 tablespoons old-fashioned rolled oats
- 1 tablespoon maple syrup
- 3/4 cup plain Greek low-fat yogurt
- 1 banana, sliced
Potato Salad with Lemon Tahini & Dill Dressing

Put the potatoes in a large pot of salted water
- For the salad:
- 2 pounds red or yellow potatoes, cut into large bite-sized pieces
- Kosher salt
- 1/2 cup fresh dill, minced
- 1/2 cup capers
- 1 bunch of green onions, white and light green parts minced
- For the dressing:
- 1 teaspoon fresh lemon zest
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh dill
- 1 1/2 teaspoons Dijon-style mustard
- 2 cloves of garlic, minced
- 1 1/2 tablespoons tahini
- 1/2 cup extra virgin olive oil + additional to thin dressing if necessary
- 1/8 teaspoon crushed red pepper flakes
- Salt and pepper to taste
Chicken and Gnocchi

1. Prepare Gnocchi: Stir together first 8 ingredients in a large bowl until smooth
- GNOCCHI:
- 1 cup soft, fresh breadcrumbs
- 1/2 cup chicken broth
- 1/4 cup freshly grated Parmesan cheese
- 2 large egg yolks, lightly beaten
- 1 1/2 tablespoons chopped fresh flat-leaf parsley
- 1 teaspoon chopped fresh thyme
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 cup all-purpose flour
- Vegetable cooking spray
- CHICKEN:
- 2 fresh thyme sprigs
- 1 fresh sage sprig (optional)
- Kitchen string
- 4 tablespoons butter
- 2 carrots, thinly sliced (about 1 cup)
- 1 celery rib, finely chopped (about 1/2 cup)
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 Parmesan cheese rind (optional)
- 4 cups shredded cooked chicken
