Chile Ancho Arroz con Cerdo (Pork and Rice)

1. In a sauce pan, combine the chile ancho, tomatillos and serrano pepper
- For Garnish:
- 3 to 4 chile ancho, stems and seeds removed
- 2 large tomatillos, washed and cut in half
- 1 serrano or jalapeño pepper, stem removed
- water
- 1 1/2 pounds pork steaks, sliced into smaller pieces (I used bone-in steaks)
- Salt
- Pepper
- Garlic powder
- Olive oil
- 1/2 cup white onion, diced
- 2 cloves garlic, minced
- 3 teaspoons chicken bouillon granules or chicken base
- 1 teaspoon cumin seeds, crushed with mortar and pestle
- 1 teaspoon Mexican oregano, crushed
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried thyme
- 2 cups low-sodium chicken broth
- 1/2 cup long-grain rice
- 1 cup crema or sour cream
- 4 green onions, sliced
- Queso fresco, crumbled, optional
