Fettuccine con Carciofi: Fettuccine with Artichokes

Clean the artichokes by removing all the tough outer leaves until you get to a pale yellow centre
- 4 artichokes
- 1 lemon, halved
- 1 pound/450 g fettuccine pasta
- 4 tablespoons/60 ml extra-virgin olive oil
- 2 cloves garlic, chopped
- 2 dried chile peppers, crushed, optional
- 20 cherry tomatoes, halved
- I cup/240 ml white wine
- 1 (25-ounce/750 ml) jar tomato puree
- 6 fresh mint leaves, chopped
- Salt
- 2 tablespoons/30 ml unsalted butter
- Generous sprinkle freshly grated Parmigiano cheese
Mexican Hot Chocolate Shortbread

- 1 3/4 cups unbleached all-purpose flour
- 1/2 cup almond flour
- 1/2 pound (2 sticks) unsalted butter, at room temperature

Sweet & Tangy Hummus

- 1 (15.5-ounce) can chickpeas, rinsed
- 1/3 cup tahini
- 3 tablespoons fresh lemon juice
- 1 1/2 tablespoons Turkish or Syrian red pepper paste or 2 teaspoons Harissa paste
- 1 tablespoon pomegranate molasses (optional)

Atole, Sweet Corn Atole

Dissolve the cornstarch with a cup of water until there are not lumps
- 2 cups of fresh corn grains
- 4 cups of milk
- 3/4 cup of water
- 1/2 stick of cinnamon
- 1/3 cup of sugar (or more to adjust to your personal taste)
- 5 Tablespoons of cornstarch
- Note: You can use honey or any other kind of sweetener.

- 1/4 cup cornstarch
- 1/2 cup half-and-half
- 1/3 cup nonfat evaporated milk
- 1/4 cup bittersweet or semisweet chocolate chips
- 2 tablespoons honey
- 1/3 cup unsweetened cocoa powder
- 1/4 cup confectioners’ sugar

- DOUGH:
- 3/4 cup warm water (105 to 115 degrees F)
- 3 tablespoons honey
- One 1/4-ounce package active dry yeast
- 3 cups all-purpose flour, plus more for dusting if necessary
- 1/2 teaspoon kosher salt
- 2 teaspoons toasted sesame oil, plus more for greasing
- FILLING:
- 2 teaspoons canola oil, plus more for greasing
- 8 ounces 80/20 ground beef
- Kosher salt and freshly ground black pepper
- 1 small yellow onion, small dice
- 2 cloves garlic, minced
- 3/4 teaspoon Chinese five spice blend
- 3 tablespoons dry sherry
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
Mushroom and Feta Cheese Scramble

Heat a little oil or use a nonstick oil spray in a medium to large skillet
- A little olive oil (about 2 Tbsp) or non-stick spray
- 5 large eggs (some eggs have really small yolks so add more if needed)
- 8 oz mushrooms sliced
- 2-3 tablespoons low fat crumbled feta (I had the flavored one but it doesn't matter really)
- Salt and pepper, to taste
Caramelized Onion Tart with Olives

Heat 1 tbsp of olive oil in a skillet
- 1 portion pizza dough
- 1 tbsp olive oil
- 3 medium-sized sweet yellow onions, sliced fairly thin
- 1 tsp salt
- 1 tsp sugar
- 1/2 cup pitted olives, like Kalamata
- 4 cloves garlic, thinly sliced, then dunked into 1 tbsp olive oil (this keeps them from burning)
- Salt and pepper to taste
