Tomato, Mozzarella and Basil Bruschetta

Preheat oven to 375 degrees In a food processor add tomatoes, basil, olive oil and 2 cloves garlic
- 1- 32 oz. can whole tomatoes drained
- 1 cup fresh basil leaves
- 4 T. extra virgin olive oil
- 6 cloves garlic peeled
- kosher salt
- black pepper
- 2 large french baguettes, sliced 1" thick
- 1 1/2 lbs fresh mozzarella cheese sliced 1/4" thick
Sutter Brittles

Crush soda crackers by head over bottom of jelly roll pan
- soda crackers – 2 packets
- 1 c. butter (no substitutes)
- 1 c. brown sugar
- 6 oz. choc Chips
- chipped nuts (1/2 c.)
Iowa State Tailgate Pretzels

Line 3 baking sheets with tin foil
- 2- 15 oz pkg pretzels
- 2 pkg dry hidden valley ranch
- 2- 12 oz bottles Orville Redenbacher's Butter popcorn oil
- 1 T. dill weed
- 1 T. ground black pepper
- 1 tsp. cayenne pepper
- 1 T. Konriko jalepeno seasoning- In spice aisle of Hyvee
Buffalo Chicken Dip

Heat chicken and hot sauce in a skillet over medium heat, until heated through
- 2 (10 oz.) cans chunk chicken, drained
- 2 (8 oz.) packages cream cheese, softened
- 1 c. blue cheese or ranch dressing
- 3/4 c. pepper sauce, such as Franks Red Hot
- 1 1/2 c. shredded cheddar cheese
Sausage Breakfast Casserole

Mix all ingredients together and our into a 9x13 pan sprayed with Pam
- 1 dozen eggs
- l lb cooked sausage
- 3 cups shredded cheddar cheese
- 1 cup milk
- 1 can Rotel- drained
Fresh Tomato Soup

Heat the olive oil in a large, heavy-bottomed pot over medium-low heat
- 3 tablespoons good olive oil
- 1 1/2 cups chopped red onions (2 onions)
- 2 carrots, unpeeled and chopped
- 1 tablespoon minced garlic (3 cloves)
- 4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
- 1/2 teaspoons sugar
- 1 tablespoon tomato paste
- 1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
- 3 cups chicken stock, preferably homemade
- 1 tablespoon kosher salt
- 2 teaspoons freshly ground black pepper
- 3/4 cup heavy cream
- Croutons, for garnish
Fruit Pizza

Combine 1/2 pkg. cream cheese and butter, mix well
- 2 (8 oz) pkg cream cheese (softened)
- 1/2 c. butter
- 1 1/4 c. flour
- 1/4 tsp. salt
- 1/3 c. sugar
- 1 tbsp. lemon juice
- 1 c. whipped cream
- assorted fresh and/or canned fruit
- 1/4 c. apricot preserves
- 1 tbsp. water
Banana Split Pie

Blend butter, sugar, vanilla and egg for 20 minutes
- 1 stick butter
- 1 cup powdered sugar
- 1 tsp vanilla
- 1 egg
- 1 8oz. can crushed pineapple-drained well
- 2 bananas- sliced
- 1 cup fresh whole strawberries
- 1/4 cup chopped peanuts
- 1/2 cup whipping cream
- Hershey Bar- grated
- Marachino Cherries
- 9 " baked pie shell
Beef Burgers

Brown hamburger along with chopped onions
- 4 lbs hamburger
- 1 cup chopped onion
- 1- 14 oz ketchup
- 1 cup water
- 1/4 cup lemon juice
- 2 T. brown sugar
- 1 T. salt
- 1 T. Worchestershire sauce
- 2 T. vinegar
- 1/2 tsp dry mustard
- 1 cup oatmeal
Dried Beef Cheese Ball II

Mix all ingredients together and chill overnight
- 3 T. Worcestershire sauce
- 2 T. Accent
- 3 pkgs cream cheese
- 3 pkgs budding corned beef, chopped
- 3 green onions, finely chopped
