Cheesy Taco Burgers

Mix ground beef, tortilla chips and Seasoning Mix in large bowl until well blended
- 1 1/2 pounds lean ground beef
- 1/2 cup crushed tortilla chips
- 1 package McCormick Cheesy Taco Mix
- 6 hamburger rolls
Five-Spice Steak Wraps

If desired, partially freeze steak for easier slicing
- 12 ounces boneless beef round steak
- 2 cups packaged shredded cabbage with carrot (coleslaw mix)
- 1/4 cup red and/or green sweet pepper cut into thin bite-size strips
- 1/4 cup julienned carrot
- 1/4 cup snipped fresh chives
- 2 tablespoons rice vinegar
- 1/2 teaspoon toasted sesame oil
- 1/2 teaspoon five-spice powder
- 1/4 teaspoon salt
- Nonstick cooking spray
- 1/4 cup plain low-fat yogurt or light dairy sour cream

Creamy Chicken Taco Cups

Preheat the oven to 425 degrees
- Garnish:
- 2 cups of roasted chicken, chopped
- 1/2 cup of black beans with 2 tbsp Mexican rice, mixed together (leftovers)
- 2 tbsp cotija cheese
- 2 tbsp green onions, diced
- 2 tbsp cilantro, chopped
- Juice from 1/2 a lime
- 2 tbsp sour cream
- 2 tbsp roasted tomato salsa (see link above)
- Sea salt and freshly cracked pepper, to taste
- 3 large flour tortillas, cut into large circles
- Refried beans (see link above)
- Sour cream
- Cilantro
- Green onions
- Tomatoes
- Avocado
- Salsa
Chicken Gyro Grilled Cheese (aka The Gyro Melt)

Heat a pan over medium heat
- 1 tablespoon butter
- 2 slices bread
- 2 slices kasseri or mozzarella (or 1/2 cup shredded)
- 1/4 cup chicken souvlaki, warm
- 2 tablespoons feta, crumbled
- 1 + tablespoon red onion, sliced or diced
- 1 tablespoon tzatziki
- 1/2 roasted red pepper (optional)
- 2 slices tomato

Preheat the oven to 350 degrees
- 12 ounces uncooked spaghetti noodles
- 1/2 teaspoon salt
- 1 lb Italian sausage
- 2 ounces sliced pepperoni
- 1 (26 ounce) jar pasta sauce
- 1/4 cup grated parmesan cheese
- 1 (8 ounce) package shredded Italian cheese blend
Amish Ground Beef and Noodle Casserole

In a small mixing bowl, combine the sour cream, cottage cheese, onion, and parsley; set aside
- 2 cups sour cream (a 16-ounce container)
- 2 cups small-curd cottage cheese (a 16-ounce container)
- 1/4 cup finely chopped onion
- 2 Tbsp. minced fresh parsley
- 1 7- to 8-ounce package medium egg noodles
- 1 Tbsp. vegetable oil
- 2 pounds lean ground round or well-trimmed chuck
- 1 6-ounce can tomato paste
- 1 small jar pizza sauce, about 14 oz. (Note: You can also use plain tomato sauce, but I usually have an extra jar on hand and it already has seasonings in it. See notes.)
- 1 Tbsp. minced fresh basil, or 1 tsp. dried
- 1 Tbsp. minced fresh oregano, or 1 tsp. dried
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
Beef Roast and Onion Gravy

Heat the oven to 325°F. Place the beef, fat-side up, onto a rack in a shallow roasting pan
- 1 beef eye round roast (about 3 pounds)
- 1/2 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped (about 1/4 cup)
- 3 cloves garlic, minced
- 1 tablespoon finely chopped fresh parsleyor 1 teaspoon dried parsley flakes
- 1 carton (26 ounces) Swanson® Beef Stock (Regular or Unsalted) (about 3 1/4 cups)

Impossibly Easy Coconut Pie

- 6 chicken leg quarters, skin removed
- 3/4 cup ketchup
- 1/2 cup orange juice
- 1/4 cup packed brown sugar

- 4 teaspoons minced fresh parsley
- 2 teaspoons Worcestershire sauce
