Country Ham Stuffed Eggs

Place the eggs in a large pan and cover with water by about an inch
- 12 eggs
- 1 shallot bulb
- 1/4 cup loosely Italian parsley leaves
- 3 ounces country ham center slices
- 2 Tablespoons Dijon mustard
- 1/2 teaspoon regular mustard powder
- dash of hot sauce
- lots of freshly ground black pepper
- 1/3 cup mayonnaise
