Mama's Strawberry Dessert

Preheat oven to 350 degrees
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup walnuts, chopped
- 2 cups strawberries, sliced
- 2 egg whites
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/2 pint heavy cream
Chicken-Broccoli Bake

Place chicken in a large skillet with the water
- 3 pounds chicken breasts (with skin and bones)
- 1 1/3 cups water
- 2 10 3/4 ounce can condensed cream of chicken soup
- 1 cup mayonnaise or salad dressing
- 1 cup shredded cheddar cheese (4 ounces)
- 1 teaspoon lemon juice
- 1/2 teaspoon curry powder
- 1/8 teaspoon pepper
- 2 16 ounce package frozen broccoli cuts, thawed and drained
- 1 tablespoon butter or margarine, melted
- 1 1/4 cups soft bread crumbs
SLOW COOKER MEATBALL SLIDERS WITH PEACH CHIPOTLE BBQ SAUCE

For the meatballs: In a large bowl, add the first 10 ingredients and mix with your hands
- For the meatballs:
- 1 lb ground pork
- 1 lb ground turkey
- 1 egg
- 3/4 cup panko bread crumbs
- 1.5 tsp cumin
- 1.5 tsp chili powder
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp extra virgin olive oil
- 1/4 cup beer or broth
- For the Peach Chipotle BBQ Sauce
- 1 tbsp extra virgin olive oil
- 1/2 onion, diced
- 3 garlic cloves, minced
- 1/4 cup peppers and sauce from canned chipotles in adobo, minced
- Two thirds cup ketchup
- 1/4 - 1/2 cup beer or broth
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp molasses
- 1/2 cup peach preserves
- Salt, to taste

Chicken Enchilada Casserole

Heat oven to 350°F. In 12-inch nonstick skillet, cook chicken and bell pepper over medium-high heat 4 to 6 minutes...
- 1 -boneless skinless chicken breast, cut into thin bite-size strips 1/2 medium red bell pepper, finely chopped
- 1/4 teaspoon ground cumin
- 1 can (18.5 oz) Progresso Light Southwestern-style vegetable soup
- 1/4 cup uncooked instant brown rice
- 1 oz fat-free cream cheese, cut into cubes
- 3 tablespoons Old El Paso fat-free refried beans (from 16-oz can)
- 4 corn tortillas (6 inch)
- 1/3 cup shredded reduced-fat mild Cheddar cheese
Bacon Cheeseburger Omelette

Cook the bacon, set aside on paper towels to drain and crumble when cool, reserving the grease
- For the burger seasoned beef:
- 6 strips bacon
- 1 small onion, diced
- 1 clove garlic, chopped
- 1 pound ground beef
- 1/4 cup ketchup
- 1 tablespoon yellow mustard
- 1 teaspoon worcestershire sauce
- salt and pepper or steak seasoning to taste
- For the omelette:
- 8 eggs
- 1/4 cup milk or cream
- salt and pepper to taste
- 1/2 cup lettuce
- 1/2 cup tomato, diced
- 1/4 cup onion, sliced
- 1/4 cup pickle, diced
- 1/2 cup cheddar, shredded
Lasagna Dip

You really cannot go wrong with a hot melted cheese dip with all of the flavors of lasagna! Try it
- LASAGNA SAUCE:
- 1/2 pound ground turkey
- 1 cup lasagna tomato sauce (see below)
- 1 cup low fat cottage cheese or ricotta or cream cheese
- 1 cup partially skim mozzarella, shredded
- 1 tablespoon oil
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon fennel seeds, crushed (optional)
- 1 (15 ounce) can crushed tomatoes
- 1 tablespoon tomato paste (optional)
- 1 teaspoon Italian seasoning or oregano
- 1 bay leaf
- 1/2 teaspoon paprika (optional)
- 1 tablespoon balsamic vinegar (optional)
- Salt and pepper to taste
- 1 tablespoon basil, chopped (optional)

- 1 1/2 pounds beef top sirloin steak, cut into short, thin strips
- 3/4 cup medium picante sauce

- 3/4 teaspoon garlic powder, or to taste
- 3 (8-inch) hoagie or hero rolls, split
