Cheesy Dip with Roasted Onions

In a blender or food processor add cheese, mayo, salt, and 1 cup of onions; blend
- 2 C. shredded cheddar cheese
- 1 C. shredded pepper jack cheese
- 4 1/2 oz. cream cheese
- 1/4 C. light mayo
- 2 C. chopped onions
- 1 tsp. sea salt

- 2 tablespoons olive oil
