Roasted Tomato Soup

Pre-heat oven to 375 degrees
- 2 lbs plum tomatoes
- 6 garlic cloves, peeled and whole
- 1/4 medium red onion
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 sprigs oregano, remove leaves from stem
- 3 -4 basil leaves
- salt
- pepper
- 2 cups fat-free vegetable broth or 2 cups fat-free chicken broth or 2 cups water
- 1/4 cup parmesan cheese, shaved or grated (optional)
Crunchy Oatmeal Topping Peach Cobbler

Preheat oven to 350 degrees F
- 6 cups fresh or frozen peach slices, peeled and pitted
- 1/2 cup brown sugar, packed
- 1/4 cup unbleached (organic) flour
- 1 Tablespoon lemon juice
- 1 cup unbleached flour
- 3/4 cup brown sugar
- 3/4 cup rolled (organic) oatmeal
- 1 teaspoon (organic) ground cinnamon
- 4 ounces (organic) (1 stick) butter, cold, cut in 8 pieces
Blueberry Crisp

Preheat oven to 375 degrees
- 4 C. blueberries
- 1/2 C. sugar
- 2 Tbs. cornstarch
- 2 Tbs. lemon juice
- 1/2 C. rolled oats
- 1/2 C. flour
- 1/4 C. brown sugar
- 2 Tbs. toasted, chopped walnuts
- 6 Tbs. light margarine or butter
Coconut Shrimp with Dipping Sauce

Soak skewers in water for 15 minutes
- Coconut Shrimp
- 14 bamboo or wooden skewers (4 to 6 inch)
- 1/4 cup all-purpose flour
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- One eighth teaspoon ground red pepper (cayenne)
- 1 egg
- 1 teaspoon water
- 3/4 cup Progresso® plain panko crispy bread crumbs
- 3/4 cup shredded coconut
- 28 uncooked large shrimp (about 1 lb), thawed if frozen, peeled, deveined, tails left on
- Dipping Sauce
- 1/2 cup apricot or peach preserves
- 1/2 teaspoon grated lime peel
- 1 tablespoon fresh lime juice

Baked Cream Cheese Spaghetti Casserole

- 12 oz spaghetti
- 1 (28 ounce) jars prepared spaghetti sauce
- 1 lb lean ground beef
- 1 tsp Italian seasoning
- 1 clove garlic, minced
- 8 ounces cream cheese
- 1/2 cup parmesan cheese, grated
HAM AND CHEESE SANDWICH CASSEROLE

Preheat oven to 375 degrees F
- 8 ounces crusty sourdough, cut into bite-sized cubes
- 12 ounces ham, cut into 1/2-inch cubes
- 1 tablespoon Country Crock spread
- 1 tablespoon flour
- 2 cups milk
- 1 1/2 cups shredded cheese, divided (I used Mexican blend)
- 1 large tomato cut into 4 thick slices
- Black pepper to taste
Easy Philly Cheesesteaks

Place onions and red peppers in a 4- or 5-qt
- 2 medium onions, halved and sliced
- 2 medium sweet red or green peppers, halved and sliced
- 1 beef top sirloin steak (1-1/2 pounds), cut into thin strips
- 1 envelope onion soup mix
- 1 can (14-1/2 ounces) reduced-sodium beef broth
- 6 hoagie buns, split
- 12 slices provolone cheese, halved
- Pickled hot cherry peppers, optional
Slow Cooker Spicy Chicken in Peanut Sauce

In 12-inch nonstick skillet, heat oil over medium-high heat
- 1 Tablespoon olive or vegetable oil
- 8 large chicken thighs (about 3 lb), skin removed
- 1 large onion, chopped (1 cup)
- 2 cans (14.5 oz each) diced tomatoes with green chilies, undrained
- 1 can (14.5 oz) crushed tomatoes, undrained
- 2 tablespoons honey
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- One third cup creamy peanut butter
- 2 cups hot cooked couscous
Better than Arby's Roast Beef

Place roast in crock pot. Stir remaining ingredients together and pour over roast
- 1 (3 to 4 pound) roast
- 1/2 cup water
- 1/2 cup firmly packed brown sugar
- 1 envelope onion soup mix
- 1 onion, chopped
- 1/2 teaspoon garlic powder,or to taste Salt and pepper to taste
Carolina Caviar

Combine black-eyed peas, bell pepper, onion, and cilantro in a large bowl
- Dressing:
- 2 (15 oz.) cans black-eyed peas, drained and rinsed
- 1/2 of a sweet bell pepper (yellow, red, or orange), finely chopped
- 1/2 of a purple onion, finely chopped
- 1/2 bunch of cilantro, finely chopped
- 1/4 c. white wine vinegar
- 1/4 c. canola oil
- 1/2 tsp. brown sugar
- 1/4 tsp. salt
- 1/4 tsp. pepper
