- 1/4 c. cornstarch or arrowroot powder (use arrowroot next time, no gmo and not as irritating)

Soak 24 bamboo skewers in water for 30 minutes
- 1 cup soy sauce
- 1/4 cup mirin
- 5 Tbs. Asian sesame oil
- Juice of 1 lime
- 1 to 2 Tbs. honey
- 2 Tbs. peeled and minced fresh ginger
- 5 garlic cloves, minced
- 1 Thai chili, finely sliced (optional)
- 2 lemongrass stalks, white portion only, finely diced
- Zest and juice of 1 lemon
- 2 green onions, white portion only, finely diced
- 2 Tbs. light brown sugar, firmly packed
- 1 flank steak, 1 1/2 to 1 3/4 lb., trimmed of excess fat
- Salt and freshly ground pepper, to taste
- Toasted sesame seeds for garnish (optional)

1. Peel the bananas. Slice them at an angle into 1-inch thick pieces
- 2 large under-ripe bananas (yellow with some green)
- 2 tablespoons butter
- 1 teaspoon ground cinnamon

1. Separate the noodles by peeling them apart one at a time
- 1/4-1/2 of bag dried Thai-style rice noodles, wide (such as Chantaboon Rice Noodles)
- olive oil
- 9 cloves garlic, minced
- 1/4 cup black soy sauce
- 1/4 cup Golden Mountain sauce
- 1 tbsp white sugar
- Beef, cut thin and pounded flat
- 2 serrano pepper, minced, or more to taste (or thai birds chili)
- 30 fresh basil leaves, chopped
- 1 teaspoon salt
- 1-2 large pepper (well cooked)

Citrus Beet Salad with Creamy Avocado Lime Dressing

1. Preheat the oven to 425F
- for the salad:
- 3 medium/large red beets
- 3 medium/large golden beets
- 2 navel oranges (or any variety)
- 1 grapefruit (Ruby suggested), optional
- Greens of choice (I used a mix of baby romaine and blanched beet greens)
- Avocado Lime Dressing (below)
- for the dressing (makes ~2/3 cup):
- 1/2 cup avocado flesh
- 1/4 cup coconut cream (the cream from the top of the can)
- 5 tbsp fresh lime juice, or to taste
- 1 tbsp agave nectar (or other liquid sweetener)
- 2 tbsp fresh orange juice
- 1 tsp grapefruit juice (optional)
- tiny pinch of salt

- 3 Tbs. minced fresh lemongrass
- 3 Tbs. peeled and minced fresh ginger
- 3 Tbs. minced garlic
- 2 tsp. Asian sesame oil
- 1 Tbs. honey
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground pepper, to taste
- Lettuce leaves for serving

POTATO SALAD

1. Cover potatoes with water in 4-quart saucepot
- 2 lbs. all-purpose potatoes, cut into 3/4-inch cubes (about 6 cups)
- 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
- 1 Tbsp. white vinegar or apple cider vinegar
- 1/8 tsp. ground black pepper
- 1/2 cup chopped onion
- 2 hard-cooked eggs, chopped
