Preheat an electric panini press on the “panini” setting
- 8 slices walnut levain bread, each about 1/2 inch thick
- 4 Tbs. ’wichcraft cranberry-apricot chutney
- 8 oz. thinly sliced roast turkey
- 4 oz. blue cheese, crumbled
- 4 Tbs. mayonnaise (optional)
- 1 cup arugula
- Olive oil for drizzling
- Kosher salt and freshly ground pepper, to taste

- 1/4 cup freshly squeezed lime juice

Creamy Raspberry Vinaigrette

Puree raspberries by pushing through a chinios
- 10oz pkg. of frozen raspberries, thawed
- 1/4 c. raspberry vinegar (Regina)
- 1/3 c. granulated sugar
- 3/4 c. vegetable oil
- 1/2 c. half & half or light cream

Chicken and Mango Skewers

In a large bowl, whisk together the olive oil, lime juice, lime zest, chili powder, cayenne, salt and sugar
- 6 Tbs. olive oil
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1 tsp. chili powder
- 1/2 tsp. cayenne pepper
- 1/2 tsp. salt
- 1 Tbs. sugar
- 4 boneless, skinless chicken breast halves, cut into 1-inch cubes
- 3 ripe but firm mangoes, peeled and cut into 2-inch cubes
Mojito

- 6 fresh mint leaves
- 1 1⁄2 Tbs. simple syrup (see related recipe at left)
- 1 Tbs. fresh lime juice (1 small lime)

- 6 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup Hellmann's® or Best Foods® Real Mayonnaise
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1 tsp celery seed (don't usually use)

In saucepan over med low heat combine glaze & corn syrup simmer 20 minutes
- 1 (14oz) package of strawberry glaze
- 1 1/2 cup corn syrup
- 1 (3oz) box cherry gelatin
- 1/2 cup hot water
- 6 granny smith apples
- 6 sticks
- 1 cup (almond nuts) or sprinkles or coconut
Parmesan-Black Pepper No-Knead Bread

In a large bowl, combine the flour, yeast, salt, black pepper, grated cheese and cheese chunks
- 3 cups all-purpose flour
- 1/4 tsp. active dry yeast
- 1 3/4 tsp. salt
- 2 tsp. coarsely ground black pepper
- 1/2 cup grated Parmigiano-Reggiano cheese
- 1/2 cup Parmigiano-Reggiano cheese chunks (1/4-inch chunks)
- Cornmeal as needed
