talians make focaccia with many different flavorings
- 1 Tbs. active dry yeast
- 1 Tbs. sugar
- 1 1⁄2 cups warm water (105° to 115°F)
- 1 ⁄2 cup olive oil, plus more for greasing
- 1 1⁄2 tsp. table salt
- 4 to 4 1⁄4 cups bread flour, plus more as needed
- 1 ⁄2 cup chopped yellow onion
- Coarse sea salt for sprinkling

Directions ( did in crock pot) Place first four ingredients in a pot
- 4 boneless chicken breast halves
- 1 medium onion, sliced
- 3-4 garlic cloves, smashed
- 1 tablespoon salt
- water
- 1 medium tomatoes, seeded and chopped
- 1 ⁄2 green bell pepper, chopped
- 1 teaspoon fresh coarse ground black pepper
- 1 teaspoon marjoram
- 1 ⁄4 cup cilantro, chopped (or to taste)
- 1 1⁄2 teaspoons ground cumin
- 2 tablespoons tomato sauce
- 1 1⁄2 teaspoons salt (to taste)
- 1 ⁄2 cup chicken broth (reserved)

- 2 rib-eye steaks organic grass fed
- 4 tbsp olive oil
- 1/2 lb grape or cherry tomatoes
- 3 leave thyme sprigs sonly
- 1 anchovy
- 1 1/2 tbsp capers
- 1 tbsp bread crumbs plain
- 1 clove garlic grated
- a splash of white wine dry
- sea salt to taste
- freshly cracked black pepper to taste
Apricot and Almond Galette

To make the dough, in a bowl, whisk together the egg yolk and almond extract
- 1 egg yolk
- 1/2 tsp. almond extract
- 1/2 cup sliced almonds
- 2 cups all-purpose flour, plus more as needed
- 3 Tbs. sugar
- 1/4 tsp. salt
- 12 Tbs. (1 1/2 sticks) cold unsalted butter, cut into cubes
- 2 Tbs. cream cheese
- 4 to 6 Tbs. ice water
- 1 1/2 lb. apricots, halved, pitted and thinly sliced
- 1 Tbs. fresh lemon juice
- 1/2 cup sugar
- 1/3 cup apricot jam or preserves
- 1 egg whisked with 1 Tbs. water
- 3 Tbs. sliced almonds

1. Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk
- 2/3 cup sugar
- 1/4 cup HERSHEY'S Cocoa
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2-1/4 cups milk
- 2 tablespoons butter or margarine
- 1 teaspoon vanilla extract
- Whipped topping

Boil the rigatoni in a large pot of salted water until al dente; drain and return the rigatoni to the pot
- 1 pound rigatoni or other tubular pasta
- 1/2 cup extra-virgin olive oil
- 4 tablespoons unsalted butter
- 3 medium garlic cloves, minced
- 1 1/2 teaspoons salt
- Freshly ground pepper
- 1/4 cup chopped flat-leaf parsley
White Chocolate Ganache

Put the cream and vanilla extract in a small saucepan and head until the cream has come to a boil
- 5.29 oz. really good white chocolate, finely chopped
- 5 tablespoons heavy cream
- 1 vanilla bean (seeds)

Put the strawberries and lemon peel in a wide heavy pot
- 4 cups small ripe strawberries, about 1 lb., washed and hulled
- Peel (with white pith) of 1/2 lemon

Sauté eggplant, onions, celery, onions, garlic and paste in olive oil until cooked
- 1 eggplant cubed with skin
- 1 1/2 stalks of celery
- 1 1/2 onion chopped
- 2 garlic gloves minced
- Olive oil
- 2 squirts of tomato paste
- 2 oz capers
- Pitted olives (handful)
- Salt and pepper
- cider vinegar 1/4 cup if 3 eggplants
- water 1/4 cup if 3 eggplants
- 2 tbsp sugar if 3 eggplants
Romaine, Gorgonzola, Grape and Walnut Salad

Preheat an oven to 350°F
- 7 Tbs. walnut oil
- 2 Tbs. olive oil
- 2 Tbs. aged balsamic vinegar
- 1 Tbs. sherry vinegar
- Salt and freshly ground pepper, to taste
- 1 cup walnuts, preferably halves
- 3 heads romaine lettuce, leaves separated and torn into bite-size pieces
- 6 small ripe figs, quartered through stem ends (optional)
- 1 cup red or black seedless grapes, halved (optional)
- 2 small pears, quartered, cored and thinly sliced (optional)
- 1/2 to 2/3 lb. Gorgonzola dolcelatte cheese, at room temperature, broken into bite-size pieces
