Spicy Grilled Ribs

Preheat an oven to 350°F
- Ribs:
- 2 racks baby back ribs, about 4 lb. total
- 2 to 3 Tbs. chili powder
- Salt and freshly ground pepper, to taste
- For the sauce:
- 1 cup tomato ketchup
- 1/3 cup cider vinegar
- 1/4 cup orange juice
- 1/3 cup firmly packed brown sugar or 1/2 cup honey
- 4 garlic cloves, minced
- 2 Tbs. Worcestershire sauce
- 2 Tbs. chili powder
- 1 Tbs. dry mustard
- 2 tsp. ground cumin (I put 1)
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cinnamon

- 8 oz. unsweetened chocolate, chopped
- 6 cups confectioners' sugar
- 16 Tbs. (2 sticks) unsalted butter
- 6 Tbs. milk, plus more, if needed
- 2 tsp. vanilla extract
- 1/4 tsp. salt
Stir-Fry Pork with Ginger

1. Heat oil in a large skillet or wok over medium-high heat
- 2 tablespoons vegetable oil
- 1/2 inch piece fresh ginger root, thinly sliced
- 1/4 pound thinly sliced lean pork (I used 3 pork chops)
- 3 tablespoon soy sauce
- 1 1/2 tablespoon dark soy sauce
- 1/2 teaspoon salt
- 3/4 teaspoon sugar
- 1 teaspoon sesame oil
- 1 green onion, chopped
- 1/3 cup Chinese rice wine
- I added some honey

- 1/2 cup shallots, chopped

- 1 tbsp 1% milk

Braised Short Ribs

- 6 bone-in short ribs (about 5 3/4 pounds)
- Kosher salt
- Extra-virgin olive oil
- 1 large Spanish onion, cut into 1/2-inch pieces
- 2 ribs celery, cut into 1/2-inch pieces
- 2 carrots, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch pieces
- 2 cloves garlic, smashed
- 1 1/2 cups tomato paste
- 2 to 3 cups hearty red wine
- 2 cups water

Roasted Prime Rib with Thyme and Marsala

For the beef: Allow the beef to stand at room temperature before roasting, 30 minutes
- Beef:
- 1 tablespoon chopped fresh thyme (used half b/c didn’t have fresh)
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 3 cloves garlic, minced
- One 6-pound bone-in beef prime rib roast, trussed
- Sauce:
- 2 cups low-sodium beef broth
- 1 cup sweet marsala
- 3 tablespoons arrowroot (used corn starch)
- 1 tablespoon chopped fresh thyme
- 3 tablespoons unsalted butter, at room temperature, cut into 1/2-inch pieces
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
