Sprinkle the chicken with salt and pepper
- Chili Oil:
- 4 chicken thighs with skin and bones
- 2 chicken breasts with skin and bones, halved crosswise
- Salt and freshly ground black pepper
- 3 tablespoons Chili Oil, recipe follows
- 1 tablespoon minced garlic
- 1/2 cup kalamata olives, pitted, coarsely chopped
- 1/2 cup pitted, coarsely chopped green olives
- 4 tablespoons chopped fresh Italian parsley leaves
- 1 1/2 tablespoons drained capers
- 2/3 cup dry white wine
- 2 cups olive oil
- 4 teaspoons dried crushed red pepper flakes

Preheat the grill pan and preheat the oven to 375 degrees F
- 3 medium-sized eggplants (about 4 pounds total)
- Sea salt and freshly ground black pepper
- Can vegetable spray
- 32 ounces ricotta cheese
- 2 large eggs, lightly beaten
- 1/2 cup shredded mozzarella
- 8 tablespoons grated Parmesan
- 3 tablespoons toasted pine nuts
- 20 basil leaves, chiffonaded
- Extra-virgin olive oil, for drizzling

In a large bowl, combine the wine, olive oil, grilling rub, salt and beef sirloin and stir to coat the meat evenly
- 1/2 cup red wine
- 1/4 cup extra-virgin olive oil
- 3 Tbs. beef grilling rub
- 1/2 tsp. salt
- 2 lb. boneless beef sirloin, cut into 1-inch pieces
- 1 red bell pepper, seeded and cut into 1-inch
- pieces
- 1 yellow bell pepper, seeded and cut into 1-inch
- pieces
- 1 orange bell pepper, seeded and cut into
- 1-inch pieces
- 1 cup molasses and rum grilling sauce
Penne with Escarole, Spicy Sausage and Rosemary

Position a rack 4 to 6 inches under a broiler and preheat
- 1 lb. spicy Italian sausages
- Salt, to taste
- 1 lb. dried penne pasta
- 1/4 cup olive oil
- 2 garlic cloves, thinly sliced
- 1 Tbs. chopped fresh rosemary
- Pinch of red pepper flakes
- 2 bunches escarole, cut into 2-inch pieces
- Freshly grated Parmigiano-Reggiano cheese, to taste

- Grated Cheese (optional can beat in with egg if you want)
Sautéed Brussels Sprouts

Finely shred the brussels sprouts after thoroughly washing
- 1 lb brussels sprouts (outer leaves removed and washed)
- 1 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 shallot, minced
- kosher salt and fresh ground pepper
Seedless Raspberry Filling

Thaw raspberries and strain juice from berries
- 12 oz frozen unsweetened raspberries, thawed
- 1/2 cup sugar
- 1 tsp lemon juice
- 2 heaping tablespoons cornstarch
- 2 tbsp raspberry liqueur such as Razzmatazz by DeKuyper (optional but highly recommended)
Chicken Quesadilla

• Combine sauce ingredients and stir until smooth
- Creamy Jalapeno Sauce:
- 1/4 cup mayonnaise
- 2 teaspoons minced jalapeno slices (nacho slices)
- 2 teaspoon juice from jalapeno slices (nacho slices)
- 3/4 teaspoon sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon garlic powder
- Dash of salt
- Quesadilla:
- 4 chicken breast tenderloins
- 4 Large Flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
- 2 slices of American cheese
- note, I use Sargento shredded cheese, either 4 cheese Mexican or authentic mexican. Basically any shredded cheese that is Mexican related.

- 1 pound boneless chuck, trimmed and cut into 1/4-inch cubes

- 1 pound bulk Italian sausage
- 2 teaspoons granulated onion
- 2 teaspoons granulated garlic
- 3 tablespoons chili powder
- 2 teaspoons hot paprika
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons cayenne pepper
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper

- 1 cup tomato paste
- 12 ounces lager beer
- 1 cup chicken stock
