Tangy Ginger Sauce

Heat the vinegar, sugar, and soy sauce together in a small pan just until the sugar has melted
- 1/2 cup apple cider vinegar
- 7 tablespoons sugar
- 1 teaspoon soy sauce
- 1/4 cup very finely minced peeled fresh ginger
Gourmet Fennel Citrus Salad

vegan, serves 2 (easily doubled to serve more)
- fennel marinade 'dressing':
- 1 1/2 cups fennel bulb, sliced thin
- 1/2 about 1/2 an extra large fennel bulb
- 1 orange, peeled, de-seeded and sliced
- 1 small red onion, sliced thin
- 3 cups organic arugula
- 1/2 avocado, sliced
- 2 Tbsp cider vinegar
- 2 Tbsp olive oil
- 1 tsp agave syrup
- 1 tsp black pepper
- 1/4 tsp salt
- 2 Tbsp lemon juice
- 1 Tbsp Vegenaise
- garnish: fennel fronds, fresh ground black pepper
Slow Cooker Chicken with Rosemary, Apples and Onions

Arrange onion and apple slices in bottom of slow cooker
- 2 cups sliced onions
- 2 apples, peeled, cored and sliced
- 2 pounds cut up chicken pieces (with bone), with or without skin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons chopped fresh rosemary leaves (I used 1 TBSP of dry rosemary was too much, use just a sprinkle next time)
- 1 cup reduced-sodium chicken broth (I used water & bullion)
- 1/2 cup cream of celery soup
- 2 cups cooked rice (white or brown) (I didn’t serve over rice)
Hot Spinach Artichoke Dip

Preheat the oven to 350 degrees F
- 1 box frozen chopped spinach (drained of excess water)
- 1 (15 ounce) cans artichoke hearts (not marinated)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup freshly grated Parmesan
- 2 tablespoon minced garlic
- 1 cup grated pepper jack cheese
- Mozzarella cheese grated
Chicken Stew

Heat the oil in a heavy 5 1/2-quart saucepan over medium heat
- 2 tablespoons olive oil
- 2 stalks celery, cut into bite-size pieces
- 1 carrot, peeled, cut into bite-size pieces
- 1 small onion, chopped
- Salt and freshly ground black pepper
- 1 (14 1/2-ounce) can chopped tomatoes
- 1 (14-ounce) can low-salt chicken broth
- 1/2 cup fresh basil leaves, torn into pieces
- 1 tablespoon tomato paste
- 1 bay leaf
- 1/2 teaspoon dried thyme leaves
- 2 chicken breast with ribs (about 1 1/2 pounds total)
- 1 (15-ounce) can organic kidney beans, drained (rinsed if not organic)
- Serving suggestion: crusty bread
Squash Bread

- 1 cup of bisquick
- 1 small onion chopped fine
- 4 eggs
- 1/2 cup grated cheese (wesson)
- 1/2 cup of oil
- Parsley
- Pepper
- 2 cups of finely chopped squash
Italian Stuffed Artichokes (another version)

Directions Rinse artichokes well, tugging leaves outward to loosen slightly for stuffing
- 4 medium fresh artichokes
- 2 -3 cups Italian style breadcrumbs
- 2 -3 tablespoons of grated parmesan cheese or 2 -3 tablespoons romano cheese
- 1 tablespoon dried parsley
- 1 teaspoon garlic salt
- 1 ⁄2 teaspoon fresh ground black pepper
- 1 ⁄4 cup extra virgin olive oil
- 1 -2 tablespoon extra virgin olive oil (for drizzling)
Honey Mustard Dressing

Combine all ingredients in a bowl and whisk until smooth
- 5 tablespoons medium body honey (sourwood is nice)
- 3 tablespoons smooth Dijon mustard
- 2 tablespoons rice wine vinegar
Autumn Fruit Salad

Core the apples and pears, and cut the tops off the persimmons, and cut into 3/4-inch chunks
- 2 medium apples
- 1 medium firm, ripe pear
- 2 persimmons
- 2 cups Red or Green grapes
- 1 large orange
- 2 bananas, sliced
- 1 can (11 ounces) mandarin oranges, drained
- 1/2 cup raisins
- 1/2 cup Almonds slivered and toasted
- 1/2 cup pomegranante seeds
- 1/4 cup dark brown sugar
- 1/2 vanilla bean, split lengthwise
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 2 tablespoons orange juice

- 4 eggs
- 1 cup sugar
- 1/2 cup butter
- 2 tsp vanilla
- 3 1/2 cups flour
- 4 tsp baking powder
- Icing
- 2 cup sifted confectioner’s sugar
- 2 tsp. vanilla
- 6 tsp. water
- Stir until creamy
