Rice Pudding

Put milk, butter, sugar and rice in pot
- 2 quarts milk
- 1 cup rice- uncooked
- 3/4 cup sugar
- Pinch of salt
- 1 stick of butter
- 1 small heavy cream
- 1 tsp vanilla
- 1 egg
Triple Chocolate Mousse Cake

To make the bottom layer: Preheat oven to 325 F
- Bottom Layer
- 6 tbsp unsalted butter
- 1-1/4 cups bittersweet chocolate chips (I used Ghiradelli’s 60% Cacao Bittersweet Baking Chips)
- 4 large eggs, separated
- 1 tsp vanilla extract
- 1/2 tsp chocolate extract (If you don’t have this, skip it and just go with 1-1/2 tsp vanilla extract) i did this just used all vanilla
- pinch salt
- 1/3 cup packed light brown sugar
- Middle Layer
- 2 tbsp Dutch-process cocoa powder (I ran out of cocoa powder, so I substituted 1 tbsp for Ovaltine)
- 5 tbsp hot water
- 1-1/4 cups bittersweet chocolate chips
- 1-1/2 cups cold heavy cream
- 1 tbsp granulated sugar
- pinch salt
- Top Layer
- 1 tbsp water
- 3/4 tsp flavorless powdered gelatin
- 1 cup white chocolate chips
- 1-1/2 cups cold heavy cream, divided
- Chocolate curls, to garnish

- 2 tablespoons boiling water
- 2 ounces unsweetened chocolate, chopped

- 2 cups sugar

- 1 teaspoon baking powder

- 1 tablespoon unsweetened dutch cocoa powder
- 1 3/4 teaspoons unsweetened dutch cocoa powder
- 2 cups boiling water
- 3/4 cup sugar
- 1 tablespoon sugar
- 1/2 teaspoon sugar
- 1 ounce bittersweet chocolate, chopped
- 2 tablespoons cornstarch, dissolved in
- 1 tablespoon cold water
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons sweet butter
- Frosting
- 12 ounces semisweet chocolate, chopped
- 12 tablespoons sweet butter
- 1/2 cup hot water
- 1 tablespoon light corn syrup
- 1 tablespoon vanilla extract

- 3 oz cream cheese (soften)
- 1 cup flour
- 1/2 cup margarine = 1 stick (melted)

- 1/2 onion, diced
- 1 clove garlic

Skinny Blue Cheese Dressing

- 1/2 cup crumbled blue cheese
- 6 oz fat free Greek yogurt
- 1 tbsp light mayonnaise
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1/8 teaspoon garlic powder

Lemon Tart with Raspberries

You can use a prepared graham cracker crust for this tart as well
- 1 butter cookie dough disk (see related recipe at left), at cool room temperature
- 2 eggs
- 2/3 cup sugar
- 12 oz. cream cheese, at room temperature
- 1/2 cup sour cream
- 2 tsp. finely grated lemon zest
- Juice of 1 lemon
- 2 Tbs. all-purpose flour
- 1 tsp. vanilla extract
- 1 carton fresh raspberries, about 6 oz.
