Skinnygirl Soup

Over high heat sauté the onions in a large pot, using the nonstick cooking spray until slightly soft
- Serves 4
- 1 medium red onion, chopped
- Nonstick cooking spray
- 6 cups chicken or vegetable stock or broth
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 2 cups chopped asparagus, broccoli, cauliflower, or a combination
- Salt and pepper to taste
- Juice of 1/2 a lemon
- Your favorite fresh herbs for garnish
Basic Ham and Bean Soup

Rinse the beans, sorting out any broken or discolored ones
- 1 pound dry Great Northern beans
- 8 cups of water
- 1/2 teaspoon salt
- 1 ham hock
- 1 cup chopped carrots
- 1/2 stalk celery, chopped
- 1 cup chopped onnion
- 1 teaspoon minced garlic
- 1 teaspoon mustard powder
- 2 bay leaves
- 2 cups chopped ham
- 1/2 teaspoon ground white pepper
Potato Casserole

- 2 can cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups grated cheddar cheese

- 1 medium tomato, chopped

Turkey-Barley Vegetable Soup

Directions Heat the oil in a large saucepan over medium-high heat
- 1 tablespoon olive oil
- 1/2 pound ground turkey
- 1 onion, chopped
- 1 carrot, sliced
- 1 stalk celery, chopped
- 6 cups chicken broth
- 1/2 cup pearl barley
- kosher salt and black pepper
- 3 cups baby spinach, chopped
Oriental Chicken Salad

Mix together Salad ingredients
- Salad:
- 8 Tablespoons sesame seeds, toasted
- 3/4 cup sliver almonds
- 2 cups chicken cooked with salt, pepper and onion powder
- 1 head shredded cabbage
- 8 green onions, chopped
- 2 packages Chicken Top Ramen crumbled
- Dressing:
- 6 Tablespoons sugar (can reduce)
- 7 Tablespoons rice vinegar
- 1 cup salad oil
- 1 teaspoon pepper
- 2 spice packets from Top Ramen

- 3 cups flour 3 teaspoons baking powder
- 1 cube margarine 1 teaspoon anise flavoring
- 1 teaspoon vanilla
- 4 eggs 1 teaspoon anise seed
- 1 cup sugar 1 Tablespoon lemon rind
- 1 teaspoon salt 1 cup chopped nuts
Black Bean Soup****

Pour the canned beans along with the liquid into a medium saucepan
- 2 15 ounce cans black beans
- 1/4 cup diced red onion
- 2 teaspoons chopped pickled jalapeño slices (I use chopped green chilies)
- 3 cups of ham cups** I added this
- 1 teaspoon sugar
- 1 teaspoon cider or winde vinegar
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- Garnish
- chopped red onion
- 6 to 8 jalapeño slices
- 1 Tablespoon sour cream
- Rice
- corn
- cheddar cheese
- monterey jack cheese
