Zippy Vegetable Soup ****

Coat 5 quart pot with non stick spray and sauté beef
- 1 pound 95% lean ground beef
- 6 cups water
- 14 1/2 ounce can stewed tomatoes, crushed, undrained
- 1 medium yellow onion in thin wedges
- 1 medium carrot, diced
- 1 Tablespoon + 1 teaspoon beef bouillon granules
- 1 1/2 teaspoon chili powder
- 3/4 teaspoon dry thyme
- 1/2 teaspoon dry oregano
- 1 cup fresh or frozen corn
- 1 cup 1 inch pieces fresh green beans
- 1 1/2 cups coarsely chopped cabbage
- 3 ounces wagon wheel pasta
Pecan Pie

Cook brown sugar and corn syrup slowly for 5 minutes stirring constantly
- 1 1/2 cup dark corn syrup 1 cup chopped pecans
- 1 cup brown sugar 1/2 cup butter
- 3 eggs 1/8 teaspoon salt

- 1 c grated parmesan cheese
- 2 Tbsp dried parsley
- 1 Tbsp dried oregano
- 2 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 c butter, melted
Minestrone Soup

This is as close as I can come to what I did for Book Club soup
- 1 T. Olive Oil or so
- 1/4 pound pancetta in a very small dice
- 2 large onions---diced
- 3 stalks celery---sliced
- 3 large carrots in small julienne
- 2 cloves garlic-tiny dice
- 2 Tablespoon tomato paste
- 1 large can diced tomatoes--the kind in a thicker juice
- 2 zucchini cubed
- 1/2 a small bag of frozen green beans
- 2 cans cannelinni beans
- 1/2 head savoy cabbage (curly)
- Few sprigs of Italian parsley
- 4 cans beef broth
- 1 parmesan rind
- potatoes-- diced
- pasta
Cream Cheese Frosting From Epicurious

- 2 (8-ounce) packages Philadelphia-brand cream cheese, room temperature
- 1/2 cup (1 stick) butter, room temperature
- 2 cups powdered sugar
- 1/2 cup canned sweetened cream of coconut (such as Coco López)*
- 1 teaspoon vanilla extract
- ,em>*Canned sweetened cream of coconut is available in the liquor section of most supermarkets nationwide.
Glazed Banana Bread

Instructions Preheat the oven to 350ºF and grease a 9X5 inch loaf pan
- Ingredients
- For the Banana Bread
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/2 cup turbinado sugar
- 1 teaspoon ground cinnamon
- 1 stick unsalted butter, melted
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- 1/2 cup pecans, roughly chopped
- Extra sugar and pecans for topping
- For the Glaze
- 1/2 cup confectioners’ sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon water

In a saucepan (double boiler) put 3 egg yolks lemon juice, rind, salt and sugar
- 3 egg yolks-well beaten
- 1/2 cup sugar
- 1/4 cup lemon juice
- 3 egg whites-stiff
- 1/2 pint whipped cream
- 1 lemon rind –grated
- 1/8 teaspoon salt
- 1/2 cup vanilla wafers
Creamy Macaroni and Cheese

Whisk eggs, milk, cayenne and mustard in small bowl
- 2 large eggs
- 1 12 ounce can evaporated milk
- 1/4 teaspoon cayenne
- 1 teaspoon dry mustard
- 3/4 pound penne or other tubular pasta
- 1/4 cup unsalted butter
- 6 ounces -1 1/2 cup Jack cheese
- 6 ounces -1 1/2 cup cheddar cheese
- salt
- 1/2 ounce -1/2 cup Parmesan Cheese
- 1/2 cup Panko crumbs
