Festive Layered Salad *****

Ham and Swiss Salad
- SALAD
- 4 cups shredded romaine or red lettuce --prefer red
- 4 carrots pared and cut into 2 inch sticks
- 1 cup small macaroni shells-cooked
- 1 package (10 ounce) peas-thawed
- 1 small red onion-sliced in rings
- 1/2 pound ham (2 cups) cubed
- 1/2 cup (2 ounces) swiss cheese grated
- DRESSING
- 1 1/2 cup mayonnaise with 1 1/2 teaspoon dill weed or 2 Tablespoons snipped fresh dill. Can add 2 hard cooked eggs cut into wedges.

- 1/4 cup sifted powdered sugar 1 1/2 cup flaked coconut

Mom's Turkey Meatloaf

- 3/4 cup quick-cooking oats
- 1/2 cup skim milk
- 1 medium onion, peeled
- 2 pounds ground turkey breast
- 1/2 cup chopped red bell pepper
- 2 eggs, beaten
- 2 teaspoons Worcestershire sauce
- 1/4 cup ketchup
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 (8-ounce) can tomato sauce
Lasagne

Heat oils in saucepan. Add beef and sausage and saute
- 2 Tablespoons vegetable oil 1 Tablespoon salt
- 2 Tablespoons Olive Oil 1 Tablespoon fresh oregano or 1 teaspoon dry
- 3/4 lb. Lean ground round 1 Tablespoon fresh basil or 1 teaspoon dry
- 1/2 lb. Italian sausage 1/2 cup grated parmesan
- 2 onions chopped fine 1/4 teaspoon fresh ground pepper
- 2 cloves garlic minced 1/2 lb. Lasagne noodles---9
- 1 can (1 lb. 13 ounce) Italian tomatoes 1 lb+ Ricotta
- 2 small cans Tomato Sauce 1 lb+ Mozarella grated
- 5 Tablespoons sugar 1/4 lb parmesan
Jo Mama's World Famous Spaghetti

My kids will give up a steak dinner for this spaghetti
- 2 lbs Italian sausage, casings removed (mild or hot)
- 1 small onion, chopped (optional)
- 3 -4 garlic cloves, minced
- 1 (28 ounce) can diced tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (15 ounce) cans tomato sauce
- 2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
- 3 teaspoons basil
- 2 teaspoons dried parsley flakes
- 1 1/2 teaspoons brown sugar
- 1 teaspoon salt
- 1/4-1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon fresh coarse ground black pepper
- 1/4 cup red wine (a good Cabernet!)
- 1 lb thin spaghetti
- parmesan cheese
Monta's Baked Beans

In electric fry pan, cook bacon, which has been cut into small pieces
- 1/2 pound bacon
- 2 large cans Van Camps Pork and Beans
- 2 large onions
- 1/3 cup brown sugar
- 2 teaspoons dried mustard
- 1 1/2 pounds ground chuck
- 2 Tablespoons Worcestershire Sauce
- 1/2 cup catsup

Cream together butter and sugar
- Glaze:
- 1/4 pound margarine or butter 1/2 teaspoon each, ginger, allspice, and baking soda
- 1 cup firmly packed brown sugar 1/2 cup chopped nuts
- 1 egg 1/2 cup raisins or dates
- 1 1/2 cup flour
- 1/2 cup canned pumpkin
- 1 teaspoon cinnamon
- 1 cup powdered sugar
- 3 teaspoons orange juice
- 1 teaspoon grated orange peel.
- Makes 3 dozen 2 inch bars.
Barbecued Baby Back Ribs Recipe
