Frozen Lemonade Pie

Preheat the oven to 350 degrees
- For the Crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 7 tablespoons unsalted butter, melted
- For the Filling:
- 2 cups heavy cream
- 1 14-ounce can sweetened condensed milk, chilled
- 1 6-ounce can frozen lemonade concentrate (do not thaw)
- For the Topping:
- 1 cup blueberries
- 1 cup raspberries
- 2 tablespoons sugar
- 1 tablespoon fresh lemon juice
Roasted Chicken & Garbanzo Beans

- 1 spatchcocked chicken
- Coarse salt and ground pepper
- 1 can (15.5 ounces) chickpeas, rinsed and drained
- Fresh lime juice (for serving)

Corn Dog Mini Muffins

Preheat the oven to 400 degrees
- 1 cup cornmeal
- 1 ⁄2 cup all-purpose flour
- 2 Tbs. packed light brown sugar
- 1 Tb. baking powder
- 1 tsp. salt
- 1 ⁄2 tsp. baking soda
- 1 cup buttermilk
- 1 ⁄2 cupmilk
- 2 Tbs. unsalted butter, melted
- 1 large egg
- 1 cup shredded extra-sharp cheddar cheese
- 5 hot dogs, diced
- Optional: Ketchup, mustard, sour cream, and/or honey mustard for dipping
Sauteed Sweet Plantains

- 2 Plantains, very ripe
- 4 tbsp butter
- 1 tsp cinnamon
- 1 tsp vanilla extract

- One 11-ounce box vanilla wafer cookies
- 1/2 cup sugar
- 2 vanilla beans—split lengthwise, seeds scraped
- 8 ounces bittersweet chocolate, finely chopped
- 1 cup heavy cream
- 1 cup sugar
- 1/2 cup light corn syrup
- 6 tablespoons unsalted butter, melted and cooled
- 4 teaspoons molasses
- 3/4 teaspoon kosher salt
- 3 large eggs
- 2 cups unsalted roasted peanuts

- 1 (12oz.) can beer (your choice, I used Genesee Beer)

- 2 tablespoons extra-virgin olive oil

- 2 poblano chile peppers, seeded and chopped
