Macaroni and Many Cheeses

1. Preheat the broiler. In a medium saucepan of boiling salted water, cook the macaroni until al dente; drain well
- 2 cups elbow macaroni
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 3 cups milk
- Salt and freshly ground pepper
- 2/3 cup freshly grated Parmigiano-Reggiano cheese
- 2 cups mixed shredded semihard cheeses, such as Mimolette, aged Gouda and Vella dry jack (1/2 pound)
Kielbasa and Apple Pasta Bake

- 1 pound rigatoni
- 2 tablespoons olive oil
- 1 large onion, sliced
