Chocolate Raspberry Truffles

- 1 package (10 oz) frozen raspberries, thawed
- 1/4 cup powdered sugar
- 1 lb semisweet or bittersweet chocolate, finely chopped
- 3/4 cup cream
- 2 tbsp light corn syrup
- 1 lb chocolate candy coating, for dipping
- 1/4 cup red candy coating, for decoration (optional)

- 1 cup salted butter (2 sticks, 1/2 pound – melted)
- 1 cup white (granulated) sugar
- 1 cup brown sugar (pack it down in the cup)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons vanilla
- 2 beaten eggs (you can just beat them up in a cup with a fork)
- 2 and 1/2 cups flour (not sifted – pack it down in the measuring cup)
- 2 cups corn flakes
- 1 to 2 cups chocolate chips

- 1/2 cup chicken broth or stock
- 1 tsp chili powder or to taste
- 1 tsp cumin powder
- 0.4 oz packet ranch dip or dressing mix*
- 8 oz package cream cheese cut into 6 pieces

- 2 cups diced cooked chicken
- 1 can (15 ounces) great northern beans, rinsed and drained
- 1/4 cup finely chopped red bell pepper
- 1/4 cup thinly sliced green onions
- 1/2 cup sliced grape cherrys
- 1 tablespoon lime juice
- Sour cream, optional
- Cheddar cheese, optional
- Pickled Jalapeno pepper relish, optional
- Finely chopped cilantro
- Dressing
- 1/3 cup cider vinegar or red wine vinegar
- 1/2 teaspoon dried leaf oregano
- 1/2 teaspoon ground cumin
