HOMEMADE OATMEAL CREAM PIES

Preheat oven to 350°F. Line cookie sheets with parchment paper
- INGREDIENTS:

- For the Cookies
- 1 cup unsalted butter, softened
- 3/4 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups quick or old fashioned oatmeal
- For the Cream Filling
- 3/4 cup (1 1/2 sticks) cup unsalted butter, softened
- 2 1/2 cups confectioners’ sugar, sifted
- 1 teaspoon pure vanilla extract
- 1 tablespoon milk or half and half
- Optional Cream Cheese filling:
- Cream cheese frosting
- 1 stick of unsalted butter softened
- 2 8 oz blocks of cream cheese softened
- 4 cups of powdered sugar
- 2 tsp of vanilla
- This is for a double batch of the oatmeal cookies
Chicken Burritos

In a large skillet, saute onion and green pepper in butter until tender
- 1 large onion chopped
- 1/4 cup chopped green pepper
- 6 tbs butter
- 1/2 cup all purpose flour
- 3 cups chicken broth
- 1 can (10 oz) diced tomatoes and green chilies
- 2 tbs chopped jalapeno pepper
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 can (15 oz) chili with beans
- 1 pkg (8oz) cream cheese - cubed
- 8 cups cubed, cooked chicken
- 24 flour tortillas (6") - warmed
- 6 cups (24 oz) shredded colby-monterey jack cheese

- 1 and 1/2 cups all-purpose flour (pack it down in the cup
- and level it off)
- 1 cup chopped pecans (measure after chopping)
- If you don’t want to use rum extract, use any other flavor of extract you like, including vanilla.
