WW Chicken and Corn Soup
- 1 tbs + 1 tsp peanut oil
- 1 medium onion - finely chopped
- 1 garlic clove - minced
- 5 oz sinned and boned chicken breast - ground
- 2 cups water
- 1 tbs + 1 tsp dry sherry
- 2 tsp soy sauce
- 2 cups canned cream-style corn
In medium sauce pan, heat oil; add onion and garlic. Saute 2 minutes. Add chicken; cook, stirring to break up meat, until no longer pink
Add water, sherry and soy sauce; bring to a boil. Reduce heat; simmer 2 minutes. Stir in corn; simmer 5 more minutes.
Ladle evenly into 4 soup bowls.
