  • 2 cups picante sauce, divided plus more for garnish
  • 1 10-oz package frozen chopped spinach, thawed, squeezed dry and chopped
  • 2 teaspoons ground cumin, divided
  • 1/2 tsp salt
  • 8 oz regular or light cream cheese, cubed
  • 12 7-inch flour tortillas
  • 1 14 1/2 oz can diced tomatoes in juice
  • 1 cup grated cheddar cheese (4 oz)
  • Optional toppings: shredded lettuce, ripe olive slices, avocado slices, sour cream
