Turkey Enchiladas Fantasticas

This recipe won the grand prize in the 1994 Pace Picante recipe contest
- 1 pound ground turkey
- 2 cups picante sauce, divided plus more for garnish
- 1 10-oz package frozen chopped spinach, thawed, squeezed dry and chopped
- 2 teaspoons ground cumin, divided
- 1/2 tsp salt
- 8 oz regular or light cream cheese, cubed
- 12 7-inch flour tortillas
- 1 14 1/2 oz can diced tomatoes in juice
- 1 cup grated cheddar cheese (4 oz)
- Optional toppings: shredded lettuce, ripe olive slices, avocado slices, sour cream
Arroz con Gandules

- Ham, salami, etc
- 1 can pigeon peas
- sazon (6 packages for 4 lbs)
- Adobo

- 2 cups mandarin orange or clementine segments
- 1/2 cup hot black tea
- 2 tablespoons honey

Spinach Aritchoke Risotto

This risotto is based on the "Mediterranean grandmotherly" combination of spinach and artichoke
- 2 large artichokes
- 6 cups vegetable broth
- 2 tbs olive oil
- 2 tbs finely chopped onion
- 1/2 lb spinach, stemmed, rinsed well and finely shredded
- 1 cup uncooked arborio rice
- 1/2 cup dry white wine
- 1 medium tomato, peeled, seeded, and diced
- 1/2 tsp ground black pepper
- 1/2 cup freshly grated Parmesan cheese
Strawberries Dusted with Cardamom Sugar

Whisk sugar and cardamom in small bowl to blend
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 cup Grand Marnier or other orange liqueur or orange juice
- 2 16-ounce baskets strawberries, hulled, left whole

Saffron Risotto with Butternut Squash

- 1 butternut squash (2 pounds)
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 6 cups chicken stock, preferably homemade
- 6 tablespoons (3/4 stick) unsalted butter
- 2 ounces pancetta, diced
- 1/2 cup minced shallots (2 large)
- 1 1/2 cups Arborio rice (10 ounces)
- 1/2 cup dry white wine
- 1 teaspoon saffron threads
- 1 cup freshly grated Parmesan cheese
Seared Salmon with Linguine and Ramp Pesto

Heat 1 tablespoon oil in large nonstick skillet over medium heat
- 2 tablespoons plus 1/2 cup olive oil, divided
- 2/3 cup thinly sliced ramp bulbs and slender stems
- 1 cup freshly grated Asiago cheese*
- 1/3 cup Marcona almonds**
- 2 tablespoons chopped fresh tarragon
- 12 ounces linguine
- 6 6-ounce salmon fillets

Wine and Cheese Bisque

Heat oil in heavy saucepan
- 3 tbsp. olive or salad oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 lb. sliced zucchini
- 2 oz. broken, thin spaghetti
- 1 can (14-1/2 oz.) diced or stewed toatoes
- 1 tsp. dried basil leaves
- 1 cup dry white wine
- 1 cup chicken broth
- 1 cup grated Jack cheese
- 1 cup Parmesan cheese
- 1/2 cup half and half or whipping cream
- Salt and cracked black pepper to taste
