- Kebobs:
- 1/4 pound 1/8-inch-thick slices serrano ham or prosciutto, cut into thirty 1-inch squares
- 24 small mushrooms, stems removed
- 6 6-to-8inch bamboo skewers
- Coarse salt
- Mayonnaise:
- 6 tbs mayonnaise
- 2 large garlic cloves, pressed
- 1 tsp fresh lemon juice
- 1 tsp plus 3 tbs extra virgin olive oil

- 2 cups whole wheat flour
- 1 cup toasted wheat germ
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil
- 3/4 cup frozen apple juice concentrate, thawed
- 3/4 cup water
- 1/2 cup unsweetened applesauce
- 1 cup carrots, finely grated
- 1/2 cup golden raisins, tightly packed
- 1/2 cup walnuts, chopped
Curry Roasted Cauliflower

Preheat oven to 425 degrees F
- 1 head of cauliflower, about 2 pounds
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 1 1/2 teaspoons curry powder
- 1 cup peas
- 1/2 red onion (optional)
- 1 teaspoon kosher salt
- 2 teaspoons lemon juice
- 1 tablespoon chopped cilantro, or to taste
Pumpkin Pistachio Cookie

Preheat the oven to 350F degrees
- 2 cups + 1 Tablespoon all-purpose flour
- 1 teaspoon baking soda
- 1 Tablespoon ground cinnamon
- 1 heaping teaspoon pumpkin pie spice*
- 1/2 teaspoon salt
- 1 and 1/2 cups old-fashioned rolled oats
- 1 cup (2 sticks) unsalted butter, melted
- 1/4 cup dark molasses
- 3/4 cup dark brown sugar (or light)
- 1/2 cup granulated sugar
- 1 egg yolk
- 3/4 cup pumpkin puree**
- 1 teaspoon vanilla extract
- 1 and 1/2 cups total add-ins* (chocolate chips, dried cranberries, pumpkin seeds, pecans, white chocolate, or a combination)

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon fresh ground black pepper
- Wet ingredients:
- 1 1/2 cups whole milk
- 1/2 cups buttermilk
- 1 egg yolk
- 1 ounce clarified butter, melted (or oil)
- 6 green onions, thinly sliced, green parts only
- 1 pound Rock shrimp, 70/90 ct., peeled and de-veined
- clarified butter or oil for pan frying, enough to coat the bottom
- GRAPEFRUIT RELISH (Yields 1 cup)
- 1 ruby red grapefruit
- 2 shallots, finely chopped
- 1 English cucumber, peeled, seeded and small diced
