Butter Lettuce Oyster Mushroom Chip Sala

Butter Lettuce Salad with Crispy Prosciutto, Oyster Mushroom Chips, Cabrales and Pears
- 1 1/2 pounds oyster mushrooms
- Extra-virgin olive oil
- Kosher salt
- Crushed red pepper flakes
- 1/4 pound prosciutto, thinly sliced
- Red wine vinegar
- 2 heads butter or Boston lettuce
- 1 D'Anjou pear, cored and thinly sliced
- 1/4 pound Cabrales or other blue cheese, crumbled
Baked Broccoli Burgers (WW points: 2.5)

Directions: Preheat your oven to 400 degrees fahrenheit
- Burger ingredients:
- 1/3 cup dry couscous
- 1 cup water
- 1 1/2 cups broccoli florets
- 2 teaspoons olive oil (2 WW points)
- 1/2 cup chopped scallions
- 1/2 cup chopped yellow onion
- 2 teaspoons ground cumin
- 1 15 ounce can of chickpeas, rinsed and drained
- 1 tablespoon sesame tahini (1.5 WW points)
- 1/2 cup panko breadcrumbs (6 WW points)
- Tahini dressing ingredients:
- 1/3 cup sesame tahini
- 1/3 cup water
- 1/4 cup plus 1 tablespoon fresh lemon juice
- 2 garlic cloves, chopped
- 3/4 teaspoon sea salt
Ginger Carrot Bread

An easy way to utilize carrot juice without having to juice dozens of carrots! Its already a winner in my book
- 1 Cup Unbleached Flour
- 1/2 Cup Wholewheat Flour
- 3/4 Tsp Ground Ginger
- 1/2 Tsp Salt

- 2 Eggs

Orange-Honey Butter

- 2 cups all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg
- 1/4 cup chilled butter, cut into small pieces
- 3/4 cup fat-free buttermilk
- 1/2 cup canned pumpkin

- 1/4 cup Orange-Honey Butter

- 1/2 cup butter, softened
- 1/2 cup honey

Cranberry Eggnog Tart

- For the Tart Dough
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 9 Tablespoons (4 1/2 oz) unsalted butter, cold and cut into small cubes
- 1/4 teaspoon kosher salt
- 1 extra large egg
- For the Filling
- 1 1/2 packages (12 ounces) cream cheese, softened
- 2 Tablespoons crème fraîche or heavy cream
- 1/2 cup plus 2 Tablespoons granulated sugar
- 2 extra large eggs
- 2 extra large egg yolks
- 1 1/2 Tablespoons brandy
- 1 1/2 Tablespoons rum
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon kosher salt
- For the Cranberry Jam
- 6 ounces (about 1 3/4 cup) fresh cranberries
- 1/2 cup granulated sugar
- 1/4 cup freshly squeezed orange juice
- Whipped cream
Pumpkin Soup with Sage and Gruyère Croutons

Melt the butter in a heavy-duty 4- to 5-quart pot over medium heat
- 2 Tbs. unsalted butter
- 1 medium yellow onion, sliced
- 6 cups 1-inch-diced peeled, seeded pumpkin
- 2 medium cloves garlic, sliced
- 1/2 cup dry white wine
- 8 medium fresh sage leaves
- 4 to 6 cups lower-salt chicken broth
- 2-1/4 cups packed grated Gruyère
- Kosher salt and freshly ground black pepper
- 6 slices rustic bread (~ 6x2 inches and 1/2 inch thick)
- 1 tsp. minced fresh sage

- 1 tablespoon tequila

Marscapone Cheese for Fruit

- 4 oz marscapone cheese
- 8 oz. ricotta
- 4 oz sour cream
- 1 cup powdered sugar
- 1/2 tsp almond extract
- 2 tsp. lemon zest
Rhubarb-Lentil Soup with Crème Fraîche

Soaking the lentils in hot water helps them cook a bit more quickly when they're added to the soup
- 1 1/2 cups boiling water
- 3/4 cup dried petite green lentils
- Cooking spray
- 2 cups finely chopped carrot
- 1 3/4 cups finely chopped celery
- 1 1/2 cups finely chopped red onion
- 1/4 cup chopped fresh parsley
- 2 cups chopped rhubarb (about 12 ounces)
- 4 cups fat-free, less-sodium chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh dill
