Shrimp and Guacamole Tostadas

I need simple so bad even my pancreas hurts
- 6 corn tortillas
- cooking spray
- 2 cups grated cheddar cheese
- 2 avocados
- 1/2 cup chopped cilantro, plus more for garnish
- 1 lime (all of the juice)
- 2 Tbs. extra virgin olive oil
- 1 pound shrimp, peeled and deveined
- 1 Tbs ground cumin
- 2 Tbs chili powder
- 1 tsp crushed red or green pepper
- 1 tsp garlic salt
- 1 red bell pepper, cut into small slices
Gyro Meat

Donair (doner or Donar), Gyros, and Schwarma are all pretty much the same thing
- 1 pound ground lamb
- 1/2 cup very finely chopped (or shredded) onion
- 2 teaspoons fresh minced garlic
- 3/4 teaspoon salt (preferably sea salt)
- 1/2 teaspoon dried ground marjoram
- 1/2 teaspoon dried ground rosemary
- 1/4 teaspoon black pepper
Chicken Adobo (Adobaw)

- 3 lbs chicken pieces
- 3 tbsp minced garlic
- 2 tbsp minced onions
- 2 tbsp vinegar
- 1 cup water
- 1 bay leaf (optional)
- 1 tbsp crushed black peppercorn
- 1 tbsp salt
- 3 tbsp oil
- 1 t tablespoon sugar (white)
- 2 tbsp soy sauce
- 1/4 cup cream, (optional)
Coconut Shrimp with Fiery Mango Sauce

1. To prepare sauce, heat a small saucepan over medium-high heat
- Sauce:
- 1 teaspoon canola oil
- 2/3 cup finely chopped onion
- 1/2 teaspoon grated peeled fresh ginger
- 1 garlic clove, minced
- 1 (12-ounce) can mango nectar
- 1/4 Scotch bonnet pepper, unseeded
- 1 1/2 tablespoons fresh lime juice
- 1/8 teaspoon salt
- Shrimp:
- 28 jumbo shrimp (about 1 1/2 pounds)
- 1/2 cup flaked sweetened coconut
- 1/2 cup panko (Japanese breadcrumbs)
- 1/3 cup cornstarch
- 3 large egg whites, lightly beaten
- 1/2 teaspoon salt
- 8 teaspoons canola oil, divided
- Cooking spray

Preheat oven to 350 F. Grease paper-lined 24-muffin cups For Batter: Combine all dry ingredients into a bowl
- MUFFIN BATTER
- 2.5 cups All-purpose flour
- 2 cups Granulated sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups Libby's pure pumpkin
- 2 large eggs
- 1/4 cup vegetable oil
- 2 cups apples
- STREUSEL TOPPING
- 1/4 cup granulated sugar
- 2 TBS all-purpose flour
- 1/2 teaspoon ground cinnamon
- 2 TBS butter or margarine

Tyler Florence's Ultimate Lasagna

Preheat oven to 350 degrees F
- 2 pound dried lasagna noodles
- Extra-virgin olive oil
- 2 pounds ground beef
- 2 pound ground Italian sausage
- 1 onion, chopped
- 2 cloves garlic, sliced
- 3 carrots, chopped
- 2 stalks celery, chopped
- 2 tablespoons chopped fresh basil
- 1/4 cup finely chopped Italian flat-leaf parsley
- 1 tablespoon chopped oregano leaves
- 2 tablespoons all-purpose flour
- 2 cups red wine
- 2 (28-ounce) cans tomatoes (recommended: San Marzano)
- 3 tablespoons heavy cream
- 1 teaspoon ground cinnamon
- 2 quarts ricotta cheese, (2 containers)
- 2 eggs, lightly beaten
- 1/2 cup grated Parmesan
- Kosher salt and freshly ground black pepper
- 1 pound mozzarella cheese, shredded
- Grated Parmesan and mozzarella, for topping
Avocado Corn Salsa

Combine all ingredients. You may prepare in advance if you leave the avocados out, then add just before serving
- 3 ears of corn
- 3 ripe avocados
- 1 red onion (or less)
- 1 red bell pepper
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/2 tbs minced garlic
- 4-8 shots of tobasco sauce
- 1 tbs ground cumin
- 1 tsp chili powder
- 1/4 cup chopped fresh oregano
- 1/2 cup lime juice (about 3 limes)
- salt and pepper to taste
Lobster Chowder

If you're using store-bought lobster meat, you can substitute equal parts clam juice and chicken broth for the lobs...
- 2 (1 1/2-pound) live Maine lobsters or 2 1/2 cups chopped cooked lobster meat
- 3 gallons water
- 3/4 cup salt
- 8 cups water
- 2 bay leaves
- 2 bacon slices, chopped
- 1 cup chopped green onions
- 1 teaspoon Hungarian sweet paprika
- 1/2 teaspoon ground cumin
- 2 cups diced peeled baking potato
- 1 cup half-and-half
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 cups fresh corn kernels (about 4 ears)
- Chopped fresh chives (optional)
Roasted Salmon with Olive-Mustard Butter and Orzo

- 12 Kalamata olives or other brine-cured black olives, pitted, chopped
