Salads - The Best Tuna Fish Salad

Marinate tuna. Place tuna in fine mesh strainer and press dry with paper towels
- 3 ((5 oz) cans of solid white albacore tuna packed in water
- 1/4 cup of minced onion
- 2 tablespoons olive oil
- 2 teaspoons of lemon juice
- salt and pepper to taste
- 1/2 teaspoon sugar
- 1/2 cup plus 2 tablespons of mayonnaise
- 1 celery rib,k chopped fine
Chicken - Santa Fe Chicken Casserole

Heat oven to 375 degrees. Combine first 4 ingredients in large bowl
- 3 cups shredded, cooked chicken breasts
- 1 can (15 oz) black beans, drained
- 1 can (14.5 oz) no-sakt-added duced tinatikesm drained
- 2 green onions, sliced
- 1 tub (10 oz) Philadelphia Santa Fe Blend Cooking Cream, divided
- 3 flour tortillas (6 inch)
- 3/4 cup Kraft Mexican Style Finely Shredded Four Cheese, divided
Bread - French Toast

In shallow bowl, combine egg beaters, milk, cinnamon and vanilla
- 1 8 oz carton Egg Beaters, 99% Egg Product
- 1/2 cup skim milk
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons margarine
- 10 slices whole wheat bread
- maple-flavored syrup, optional
Soups - Black Bean Soup with Rice (Thick) (Gayle Lovette)

Brown chopped onion and green pepper in little bit of olive oil
- Chopped onion
- Green pepper
- olive oil - just a little to brown onion and green pepper
- 2 cans of Green Giant Black Beans
- Chili powder
- 1 beef bouillon cube
- 1 tablespoon vinegar
Chili - Super Good Chili

Heat oil in 5 – qt Dutch oven or heavy saucepot over medium heat
- 1 tablespoon vegetable oil
- 1 1/2 lbs. Ground beef chuck
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ground cumin
- 2 cans (16 oz each) pinto beans, drained and rinsed
- 1 can (16 oz each) red kidney beans, drained and rinsed
- 1 can (12 oz) diced tomatoes
- 1 can or bottle (12 oz) beer
- 1 can (4 oz) chopped green chilies
- 1 tablespoon hot pepper sauce
- 1 1/2 teaspoon salt
- Shredded cheddar or Monterey Jack Cheese, optional
Salads - Seven Layer Salad

Note: 2,3,4, are optional depending on preference of the cook
- 1 . Layer one head of lettuce in serving dish
- 2 . 1/2 cup chopped celery
- 3 . 1/2 cup chopped green pepper
- 4 . 1/2 cup chopped onion (Vidalia or green)
- 5 . 2 pkgs frozen peas (cook, drain and chill
- ahead)
- 6 . Spread 2 cups of mayonnaise on top
- 7 . Sprinkle 4 tablespoons sugar (or less,
- depending on your diet)
- 8 . Shred 8 oz shredded cheese on top
- 9 . Crumble 8-10 slices of bacon on top. Toss
- before serving.

Cream sugar and softened butter
- 6 eggs
- 3 cups of Swans Down Cake Flour
- 2 cups of sugar
- 2 sticks of Lands of Lakes Butter, softened
- 1 pint of whipping cream
- 1 teaspoon vanilla
Vegetables - Vidalia Onion Side Dish

Peel 2 medium onions and cut a thin slice from bottom and top of each one
- 2 medium onions, peeled
- 1 beef bouillon cube and 1/2 tablespoon butter to each onion
- Garnish each onion with fresh parsley sprig (optional)

Also good to add fresh peaches- ½ quart Of peaches mashed well can be added to above Mixture Freeze in ice cream...
- 4 eggs
- almost 3 cups sugar
- 4 tablespoons flour
- (Mix flour & sugar together well before
- adding to liquid mixture.)
- 1 can Pet milk
- 1 quart Sweet Milk
- Finish filling freezer container with water

- 1 can tomato soup
- 2 large packages (8 oz) of cream cheese (softened)
- 3/4 cup chopped celery
- 3/4 cup chopped onion
- 1 envelope unflavored gelatin
- 1 cup mayonnaise
- 2 cans medium deveined shrimp (drained)
