Coat a nonstick skillet with cooking spray; place over medium-high heat until hot
- Vegetable cooking spray
- 6 oz freshly ground raw turkey
- 6 oz ground round
- 1/2 cup chopped onion
- 1 16 oz can pinto beans, drained and mashed (or can use fat free refried beans)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 4 oz can chopped green chiles, undrained
- 1/2 cup (2 oz) shredded reduced-fat Monterey Jack Cheese
- 1/2 cup (2 oz) shredded 40% less-fat Cheddar Cheese
- 3/4 cup no-salt-added commercial picante sauce
- 1/2 cup nonfat sour cream alternative
- 1/4 cup sliced green onions

Soup - egetarian Minestrone Soup (Gayle Lovette)

Heat oil in large sauce pan over medium heat
- 2 teaspoons olive oil
- 3/4 cup chopped onion
- 3 cups water - ckicken broth- 2 cans & water)
- 2 cups diced or sliced zucchini
- 1 cup of sliced carrots
- 1 cupo drained canned cannollini beans
- 3/4 cup diced celery
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/8 teaspoon coursely ground black pepper
- 1 can diced tomatoes, undrained (14.5 oz can)
- 1 can otel tomatoes and green chilies
- 1 garlic clove, minced
- 1/4 cup uncooked ditalini or elbow macaroni (very short tubular macaroni)
- 4 teaspoons of grated Parmesan Cheese

Mix all of above well and place in 9x11 pyrex dish
- 2 packs of Oreo cookies, crushed
- 1/2 gallon Sealtest Vanilla Frozen yogurt, softened (probably any brand will do)
- 9 oz of large container of Cool Whip

Beef Roast - Sunday Pot Roast

- 1 beef chuck pot roast (about 2 1/2 lbs.)
- salt and black pepper
- 3 medium baking potatoes (about 1 lb. unpeeled)

- 1 large parsnip
- 2 large celery stalks
- 1 medium onion, sliced
