Vegetables - Stuffed Mushrooms-microwaved (Paige Sutcliff)

Combine bacon, onions and green pepper in 4 cup measure cup
- 4 slices bacon, diced
- 1/4 cup minced onion
- 2 tablespoons minced green pepper (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon Worcestershire Sauce
- 1 3 oz package of cream cheese
- 1 lb. of small fresh mushrooms
- 1/2 cup of soft bread crumbs (or crackers)
- 1 tablespoon margarine
Salads - Spring Salad Souffle

In saucepan, mix jello and water; gradually blend in soup
- 1 – 3 oz package lime jello; 1/2 cup water; 1 can of cream of asparagus soup; 1/2 cup mayonnaise; 1 tablespoon vinegar; 1 teaspoon grated onion; dash of pepper; 1/2 cup shredded cucumber; 1/4 cup diced celery; 1 tablespoon snipped parsley.
Chicken - Chicken Primavera with pasta

Cook and stir chicken in large nonstick skillet on medium heat 5 to 6 minutes or until done
- 1 lb. boneless, skinless chicken breasts cut into bite-sized pieces
- 2 cups frozen stir-fry broccoli, carrots, red peppers, snow peas)
- 1 tub (10 oz) Philadelphia Italian Cheese and Herb Cooking Creme
- 2 cups hot cooked fettuccine
Vegetables - Sweet and Sour Carrots

Cook carrots until tender but not mushy
- 2 lbs. Carrots, sliced and cooked, 1 can of tomato soup, boiled; 1/2 cup sugar; 1/2 cup vinegar; 1/2 cup oil; 1 onion, finely chopped; 1 green pepper, finely chopped.

- 2 lbs. stew beef
- 1 16 oz bag of cut okra (1 lb)22 gallons of water
- 2 cans (14.5 oz each) diced tomatoes
- 2 6 oz cans of tomato paste
- 10-12 potatoes, diced into cubes
- 1 chopped onion
- 1/2 teaspoon celery seed
- 1/4 cup salt
- 1/2 tablespoon black pepper

Cover potatoes, onions, celery, with water
- 3 large baking potatoes, peeled and diced
- 1 large onion, diced
- 2-3 stalks of celery, diced
- salt and pepper to taste
- 1/2 can (large) of evaporated milk
- 1/2 stick margarine (optional)
Dessert - Strawberry Cheese Cake in a Glass

In bowl, toss strawberries with jelly or sugar; cover and set aside
- 1 pint basket of strawberries, steamed and sliced
- 3 tablespoons currant jelly or 2 tablespoons sugar
- 8 oz light cream cheese, softened; 3 tablespoons skim milk; 2 tablespoons lemon juice; 2 tablespoons sugar; 1 cup light whipped topping; 1 cup graham cracker crumbs
Desserts -Weight Watchers Strawberry Pie (like Shoney's)

Combine water, corn starch and cook on medium heat till thick; stirring to keep from sticking
- Crust:
- 1 1/2 cups water; 6 teaspoons corn starch; 4 packs sweetner; 1 pack nutrasweet gelatin (strawberry); 3 cups fresh strawberries
- 6 long graham crackers; 6 teaspoons reduced calorie margarine; 2 packs of sweet and low

2 lbs. of stew beef, seared and then cook in pressure cooker 10 minutes with a little salt and pepper
- 2 lbs. of stew beef
- 5 14 1/2 oz cans of whole tomatoes
- 1 16 oz package frozen vegetable soup mix
- 1 16 oz package of vegetable gumbo
- 1/2 of a 16 oz bag of frozen, sliced okra
- 1 chopped onion
- 1 quart of tomato juice
- 4-6 stalks of celery, chopped
- 4-6 carrots sliced
Desserts -Cherry Cream Pie

Whip cream cheese according to directions
- 1 large package of Dream White (2 envelopes); 1 8 oz package of Cream cheese, 1 box ten-x powdered sugar; 1 cup chopped pecans; 1 #2 can prepared Cherry Pie Filling; 3 small baked pie shells (Pet Ritz)
