Vegetables - Pineapple Casserole

In bottom of greased 9x13 pan, layer pineapple
- 2 large cans chunk pineapple, drained
- 1 stick margarine
- 1/2 cup sugar
- approximately 1/4 cup flour
- 1/2 teaspoon grated cheese
- 3/4 cup crushed Ritz crackers
- 1/2 cup melted margarine
Beef - Ground Beef-Noodle Casserole

Brown ground chuck with onions; season to taste with salt, pepper, celery salt and stir well
- 1 1/2 lbs. ground chuck
- 1 medium onion, finely chopped
- 1 8 oz package of large noodles
- 2 small cans of tomato sauce
- oregano
- celery salt
- 1 cup shredded cheddar cheese
Vegetables - Hash Brown Casserole

In a large bowl, combine the soup, sour cream, and garlic salt
- 2 cans (10 3/4 oz each) condensed cream of potato soup, undiluted
- 1 cup (8 oz) sour cream
- 1/2 teaspoon garlic salt
- 1 package (2 lbs.) frozen hash brown potatoes
- 2 cups (8 oz) shredded cheddar cheese
- 1/2 cup grated Parmesan cheese

- 1/4 cup garlic powder
Salads - Potato Salad - Butler's Pantry

Scrub potatoes with brush; remove eyes, cuts, bruises
- 4 lbs. New red potatoes, with good skin (not old red potatoes)
- dried dill weed (to taste; approximately 1 tbsp.
- Green onions (approximately 5-6, depending on size)
- Miracle Whip or Publix Salad Dressing (will not taste the same with mayonnaise)
Breads - Charlotte Johnson's Angel Biscuits

Mix dry ingredients, then cut in shortening
- 5 cups self-rising flour or plain flour (then add 3 tablespoons baking powder and 1 1/2 teasp salt if plain flour)
- 2 packages yeast dissolved in 1/4 cup warm water
- 1 teaspoon bakaing soda
- 1 cup shortening
- 2 cups buttermilk
- 1/3 cup sugar
Seafood - Grilled Salmon

Place salmon in a shallow dish
- 2 salmon fillets (about 1 lb each)
- 1/2 cup vegetable oil
- 1/2 cup lemon juice
- 4 green onions, thinly sliced
- 3 tablespoons minced fresh parsley
- 1/2 teasp dried rosemary
- 1/2 teasp salt
- 1/8 teasp pepper
Breads - Hot-Water Cornbread (from Southern Living Magazine)

Combine first 4 ingredients in a bowl; stir in half-and-half and 1 tablespoon oil
- 2 cups white cornmeal (I use White Lily)
- 1/4 teaspoon baking powder
- 1 1/4 teaspoons salt
- 1 teaspoon sugar
- 1/4 cup half-and-half
- 1 tablespoon vegetable oil
- 1 to 2 cups boiling water
- vegetable oil
- softened butter
Breads- Strawberry Bread (Paige Sutcliff)

Mix well, then gradually add the above dry ingredients
- Mix the following:
- 3 cups flour
- 1 tsp. baking soda
- t tsp. salt
- 1 TBSP cinnamon
- Combine the above ingredients and set aside.
- 1 1/4 cups vegetable oil
- 2 cups sugar
- 3 eggs
Salad dressings - Thousand Island Dressing

Mix together all ingredients with 4 eggs that have been boiled and grated
- 3 eggs – boiled and grated
- 1 cup ketchup
- 1 cup mayonnaise
- 1/2 teaspoon kosher dill pickle, grated
- 1/4 teaspoon mustard
- dash of chili powder
