- 1/2 cup green onions w/tops, chopped
- 6 eggs, beaten
- 1 teasp onion salt
- 1 cup Swiss cheese, grated
- 2 cups Half and Half

- 12 peaches
- 2 cups sugar
- 1 can Eagle Brand Condensed Milk
- 2 quarts milk
- 1 8 oz carton sour cream
- 2 teasp. vanilla

Whip Dream Whip according to directions
- 1 large package of Dream Whip (2 envelopes)
- 1 8 ox package of cream cheese
- 1 box Ten-X powdered sugar
- 1 cup chopped pecans
- 1 #2 can prepared cherry pie filling
- 3 small baked pie shells (Pet Ritz)
Vegetables - Country Turnip Greens

In a Dutch oven or soup kettle, fry salt pork just until cooked
- 3/4 lbs. Lean salt pork or bacon, diced
- 4 1/2 lbs. Fresh turnip greens, trimmed
- 1 1/2 cups water
- 1 large onion, chopped
- 1 teaspoon sugar
- 1/4 to 1/2 teaspoon pepper

In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth
- Topping:
- 3 cups cold mashed sweet potatoes (prepared without milk or butter)
- 1 cup sugar
- 1/2 cup milk
- 1/4 cup margarine, softened
- 3 eggs
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup packed brown sugar
- 1/2 cup chopped pecans
- 1/4 cup all-purpose flour
- 2 tablespoons cold margarine
Chicken 'N' Stuffing Scallop (Paige Sutcliff)

Prepare stuffing according to package directions for dry stuffing
- Pimento Mushroom Sauce:
- 1 8 oz package (3 1/2 cups) Herb-seasoned stuffing
- 3 cups cubed chicken (cooked, canned or frozen)
- 1/2 cup butter
- 1/2 cup of all-purpose flour
- 1/4 teaspoon salt
- dash of pepper
- 4 cups chicken broth
- 6 slightly beaten eggs
- 1 recipe P:imento Mushroom Sauce (see below)
- Mix 1 can condensed cream of mushroom soup, 1/4 cups milk, 1 cup dairy sour cream and 1/4 cup chopped pimento. Heat and stir till hot. Serves 12.
Desserts - Low-Fat Key Lime Pie

Preheat oven to 325. Sprinkle gelatin over cold water in a small bowl; set aside
- 1 teaspoon unflavored gelatin; 2 tablespoons cold water; 1/2 cup fresh lime juice; 2 egg yolks; 1 (14 oz) can fat-free sweetened condensed milk.
- Graham Cracker Crust
- 3 egg whites (at room temperature); 1/4 teaspoon cream of tartar; 1/8 teaspoon salt; 1/3 cup sugar; lime slice (optional)

- 1 1/2 cups grated sharp cheddar cheese
- 1 small can chopped ripe olives
- 1/2 teasp garlic powder
- pinch of salt
- 1 chopped green onion (including top)
- 1/2 teasp curry powder

- 1/2 cup olive or vegetable oil
- 1/4 cup melted margarine
- 1 teaspoon thyme leaves (optional)
- 1 teaspoon marjoram leaves (optional)
- 1/4 teasp pepper
- 2 lbs. All purpose potatoes, cut into quarters
