Combine garlic, salt, olive oil, wine vinegar, ground peppper and thyme
- 1 pkg. fresh spinach or 10 oz. fresh spinach
- 2 cups (4oz.) sliced mushrooms
- 1/2 med. red onion, sliced thin
- 2 oz. (1/2 cup) blue cheese crumbled
- 1 clove garlic crushed
- 1/4 teasp. salt
- 6 Tbsp. olive oil
- 2 Tbsp. white wine vinegar
- Freshly ground pepper
- 1/4 teasp. ground thyme
Strawberry Pie

- 4 pints strawberries-divided
- 1 cup sugar
- 2 Tbsp. cornstarch
- 1 baked pie shell

- FROSTING:
- Ingredients 1/4 cup shortening
- 3/4 cup sugar

- 1/2 cup sour cream
- 1/2 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/2 cup confectioners' sugar
- 1/4 teaspoon vanilla extract
- 3 to 4 teaspoons hot water
Banana Cake from Cincinnati T-Room

- Ingredients:
- 3 ripe bananas crushed (about 1 1/2 cup)
- 2 cups sugar
- 2 eggs
- 1 cup melted shortening
- 1 cup buttermilk
- 1 teasp. baking soda
- 1 teasp. baking powder
- 2 1/2 cups sifted flour
- pinch of salt
- 1 teasp. vanilla
Baked Manicotti

Filling: 1/4 cup filling for each manicotti 2 lbs
- Sauce:
- 1/3 cup olive oil
- 1 1/2 cup finely chopped onion
- 1 clove garlic crushed
- 1 (2lb.3oz.) Italian peeled tomatoes, undrained
- 1-6oz. can tomato paste
- 2 Tbsp. chopped parsley
- 1 Tbsp. salt
- 1 Tbsp. sugar
- 1 1/2 cups water
- 1 teasp. oregano
- 1 teasp. basil
- 1/4 teasp. pepper
- Makes 18 2-13x9x2" pyres baking dishes
- Batter:
- 6 eggs
- 1 1/2 cups flour
- 1/4 teasp. salt
- 1 1/2 cups water
- Combine and let stand 1/2 hr. then fry 3 Tbsp. batter in 8" skillet
Mexican Meatball Soup

Directions In a heavy large pot, heat the vegetable oil over medium-high heat

- 1 tablespoon vegetable oil
- 1/2 small onion, chopped (about 1/2 cup)
- 1/3 cup uncooked long-grain rice
- 2 tablespoons chopped fresh parsley
- 1 pound ground sirloin beef
- Salt and freshly ground black pepper
- 1 carrot, cut into rounds (about 3/4 cup)
- 1 serrano chile, whole
- 1 Yukon gold potato, skin on, diced (about 1 cup)
- 2 tablespoons tomato paste
- 8 cups vegetable stock
- 2 zucchini, diced (about 1 cup)
Perfect Pot Roast

- Ingredients
- Salt and freshly ground black pepper
- One 3 to 5-pound chuck roast
- 2 or 3 tablespoons olive oil
- 2 whole onions, peeled and halved
- 6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
- 1 cup red wine, optional
- 3 cups beef broth
- 2 or 3 sprigs fresh rosemary
- 2 or 3 sprigs fresh thyme
