- 2 lbs of Boneless Skinless Chicken Thighs, cut into bite size pieces
- 2 cups of Long Grain White Rice
- 3 cups of Chicken Stock
- 1 14oz Can of Diced Tomatoes or Tomato Sauce
- 1 cup of Frozen Peas, thawed
- 3/4 cup of Small Pimento Stuffed Green Olives
- 3 Tbsp of Vegetable Oil
- Fresh Chopped Parsley or Cilantro, chopped
- Salt and Pepper, to taste

- 4 cups All Purpose Flour
- 1/4 cup Extra Virgin Olive Oil
- 1 Tbsp Kosher Salt
- 1 cup Warm Water (about 110 degrees Fahrenheit)
- 2 Tbsp Sugar
- 1 Package Dry Yeast
- 1 1/2 Tbsp Chopped Fresh Rosemary
- 4 Cloves Garlic Thinly Sliced
- Extra Virgin Olive Oil for Drizzling
- Kosher Salt and Coarse Ground Black Pepper (to sprinkle over top)
