- 2 cups panko breadcrumbs
- 2 tbsp. canola oil
- 1/2 cup all-purpose flour
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper

- 1 tbsp. water
- 1 tbsp. Dijon mustard
- 1 tsp. minced fresh thyme or 1/4 tsp. dried

- 1 1/2 lbs. boneless, skinless chicken breasts, cut into 3/4-inch wide strips

- 2 eggs
- 1/4 cup milk
- 1/4 cup flour
- 1 cup breadcrumbs

- 1 jar favorite marinara sauce

Begin by halving and deseeding your tomatoes
- ■4 tomatoes, halved and deseeded
- ■1/4 white onion, cut into large pieces
- ■1 salsa pepper, cut into large pieces (deseeded if you can’t take the heat!)
- ■2 cloves garlic, roughly chopped
- ■1/4 cup packed cilantro
- ■1/8 cup parsley
- ■1/4 – 1/2 tsp. salt, depending on your preferences
- ■1/4 tsp. pepper
- ■1/2 tsp. ground cumin
- ■dash of chili powder

Place a pizza stone on a rack in the lower third of the oven and preheat to 400 F

- 1 1/2 cups (3 oz) broccoli florets
- 2/3 cup whole-milk ricotta cheese
- 2 oz sliced provolone cheese, torn into small pieces
- 2 tablespoons coarsely chopped fresh basil leaves
- 1 ball thin-crust pizza dough (recipe follows), at room temperature

- 1 T unsalted butter
- 1 T flour
- 3/4 cup milk
- 1 clove garlic, finely grated or minced
- 1 jalapeno pepper, finely minced
- 1 cup Colby Jack cheese
- 1/2 -1 tsp cayenne pepper

To make the butterbeer: Set out 6 16-ounce glasses
- FOR THE BUTTERBEER
- 6 12-ounce bottles chilled cream soda [I prefer IBC (which is vegan) or Polar Classics Vanilla, but any will work perfectly], substitute diet cream soda for a still yummy sugar-free version
- 3 teaspoons (1 tablespoon) imitation butter flavor, or 2 tablespoons clarified butter (instructions linked above **clarified butter does not always blend well with the cold beverage, see info above**)
- OPTIONAL – 1 ounce light rum, per serving, for adults only

- 2 cups heavy cream
- 6 tablespoons sugar, or splenda for sugar free version
- 2 teaspoons vanilla extract

- 2 packages frozen spinach, defrosted with extra water squeezed out
- 2 cups provolone cheese, shredded
- 1 cup Asiago cheese, grated
- Zest of 1 lemon
- 8 springs of thyme, leaves removed
- 2 cloves garlic, grated
- Salt and freshly ground black pepper
- 1 package pizza dough, such as Pillsbury
- 1 tablespoon extra-virgin olive oil (EVOO)
- 1 tablespoon sesame seeds
