Preheat oven to 375°F. Bring a large pot of salted water to a boil
- pound of pasta (I used cavatelli shaped pasta)
- 1 pound breakfast sausage, removed from casings and crumbled
- 1 large onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 jalapeno pepper, discard seeds and dice
- 1/2 tbsp garlic salt
- 1 garlic clove, minced
- 4 tbsp butter
- 6 tbsp flour
- 4 c. whole milk
- 5 c. colby jack cheese
- 1 c. pepper jack cheese
- salt and pepper to taste
- 4 eggs
- 6 toasted breakfast biscuits, crumbled (homemade or the from the refrigerated aisle of the grocery store)

Directions: 1. In a large saucepan, heat the olive oil over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 onion, finely chopped
- 6 cloves garlic, thinly sliced
- 6 skinless, boneless chicken thighs, cut into 1/2-inch pieces
- 2 canned chipotle chiles in adobo sauce, finely chopped, plus 2 tablespoons adobo sauce
- 6 cups chicken broth
- 1/2 cup chopped fresh cilantro
- Juice of 2 limes
- Salt and pepper
- 1 hass avocado, thinly sliced lengthwise into 12 pieces
