chicken enchilada pasta

Cook chicken, drain, and shred {or shred your rotisserie}
- 2-3 chicken breasts, cooked & shredded {or shredded rotisserie chicken…I used the breasts}
- 2 tbsp. olive oil
- 2 garlic cloves, minced
- 1 medium onion, diced
- 1 red pepper, diced
- 1 {4 oz.} can diced green chiles
- 1/2 tsp. salt
- 2 tsp. chili powder
- 1 tsp. cumin
- 2 {10 oz.} cans green chili enchilada sauce
- 2/3 cups red enchilada sauce
- 2 cups shredded cheese {I used colby & monterrey jack}
- 1 cup sour cream
- Penne pasta
- Optional toppings
- Avocado
- Green Onions
- Black Olives
- Tomatoes
- Sour Cream

- 4 chicken breasts, cooked
- 2 pans of cornbread or two quarts (I always use Buttermilk or "Dixie" cornbread)
- 2 hamburger or hot dog buns (I have used leftover, homemade yeast rolls or white bread)
- 2 Tbsp sage (add more to taste. I usually end up adding about a Tablespoon more)
- 1 medium onion, chopped
- 2-3 eggs, hard boiled and chopped
- 2 cans cream of chicken soup (separated)
- 1 stick margarine or butter, melted
- 2 cans chicken broth (3-4 cups)

- 1 pound lean ground beef
- 1 large egg
- 1/2 cup finely chopped white onion

In a bowl, combine the ground turkey, cheese, cilantro, chili powder, grill seasoning, cumin and hot sauce
- 1 1/4 ground turkey breast
- 4-ounce chunk Monterey pepper jack cheese, cut into 1/4-inch dice
- 1/4 cup cilantro leaves, chopped (about a handful)
- 1 tablespoon chili powder (a palmful)
- 1 tablespoon grill seasoning
- 2 teaspoon ground cumin
- 1 tablespoon hot sauce, optional
- 1/4 small red onion
- 1/4 cup extra-virgin olive oil (EVOO), divided
- 1/4 cup store-bought chipotle salsa
- Juice of 1 lime
- 3 hearts of romaine, chopped
