Pumpkin Creme Brulee

Whisk cream, milk, pumpkin & spice in a medium saucepan until blended
- 1 C each heavy (whipping) cream & whole milk
- 1 C canned 100% pure pumpkin
- 1 1/2 tsp. pumpkin pie spice
- 2 tsp. vanilla extract
- 5 large egg yolks
- 1/2 C superfine granulated sugar, plus 6 T extra for topping
- pinch of salt

Grease pan and preheat oven to 350°
- 3/4 C butter, oleo
- 3 T sugar, white
- 1 1/2 C flour
- 3 eggs, yolks and whites separated
- 2 1/4 C brown sugar
- 1 C chopped nuts
- powdered sugar (for dusting)
Della’s Apple Dumplings

Mix sugar, water, cinnamon, nutmeg & coloring in small saucepan
- Dough:
- 1 C sugar
- 1 C water
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 6-10 drops red coloring
- 3 T butter or margarine
- 2 C sifted flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2/3 C shortening
- 1/2 C milk
- 6 medium apples
White Chicken Chili

Cover chicken breasts with water in a saucepan; simmer until cooked through, about 20-30 minutes
- 4 boneless, skinless chicken breasts
- 8 oz. package shredded Monterey Jack cheese
- 16 oz jar salsa
- 3 - 15 oz. cans Great Northern beans, drained & rinsed
Angel Food Delight (1982 – Nell)

- 1 large angel food cake
- 1 – 8oz. package cream cheese
- 1 C powdered sugar
- 1 T milk
- 1 can cherry pie filling
- 2 packages dream whip
Buttermilk Pastry

In a large mixing bowl, combine the flour & salt
- 6 C flour
- 1 T salt
- 2 C shortening
- 1/2 C butter (1 stick)
- 2 T vegetable oil
- 1 C buttermilk
Strawberry Rhubarb Baked Oatmeal

Preheat oven to 350°. Grease a 9x13 baking dish
- 2 C diced rhubarb
- 3 C diced strawberries
- 2 eggs
- 1/4 C applesauce
- 1/4 C oil
- 1/2 C sugar
- 1 1/2 C milk
- 3 C oats
- 1/2 C whole wheat flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 - 1/2 C brown sugar, for sprinkling
Chunky Monkey Muffins

Preheat oven to 350°. Grease stoneware muffin pan and set aside
- 1 1/4 C whole wheat flour
- 1/2 C all-purpose flour
- 3/4 C packed brown sugar
- 2 T ground flax seed
- 1 1/2 T dark cocoa powder
- 2 tsp. baking soda
- 1/4 tsp. salt
- 2/3 C semi-sweet chocolate chips
- 6 oz. vanilla yogurt
- 2 medium over-ripe bananas, mashed
- 1 egg
- 1 tsp. vanilla extract
- 2 T oil
- 1/4 C milk
- 1/3 C smooth peanut butter
- 2 T wheat germ

- 4 oz. mozzarella, cut into 6 pieces 2 inches long
- 6 boneless, skinless, thin-sliced chicken breasts (about 4 oz. each), pounded out to 1/4 inch thickness
- 3/4 C butter (1 1/2 sticks)
- 1 T fresh parsley, chopped
- 3/4 tsp. dried thyme (or 1 T fresh)
- 1/4 plus 1/8 tsp. salt
- 1/2 C dry white wine
- 3/4 lb. dried angel hair pasta
- 1/4 C grated parmesan cheese
