- 1 C all-purpose flour
- 1 C whole-wheat flour
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- pinch of nutmeg
- 1 C packed brown sugar
- 2 granny smith apples, peeled, cored and cut into 1/4" pieces
- 1/4 C unsalted butter, softened
- 2 eggs
- 1 C natural applesauce
- 1 tsp. vanilla
- 3/4 C buttermilk
Creme Brulee Cupcakes

Preheat oven to 350°F. Mix flour, baking powder, and salt together and set aside
- Cupcakes:
- 2 1/2 C all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt, plus a pinch for the egg whites
- 1/2 C (1 stick) unsalted butter, room temperature
- 1 1/2 C sugar
- 2 eggs, separated
- 1 C milk (I used half and half)
- 3 T caramel syrup
- 1 tsp. vanilla extract
- Brown Sugar Swiss Meringue Buttercream:
- 1 C light brown sugar
- 4 egg whites
- 1/4 tsp. salt
- 1 C (2 sticks) unsalted butter, room temperature
Avocado Pesto Pasta

- 1 box (12oz.) whole wheat spaghetti
- 3/4 - 1 C pesto
- 2 avocados, halved & pitted
- juice of 1/2 lemon
- 2 tomatoes, sliced

- Streusel Topping:
- 2 1/8 C flour, divided
- 1/2 C sugar
- 2 1/2 tsp. baking powder
- 1 tsp. minced lemon peel
- 1/2 tsp. powdered lemon peel
- 1/2 tsp. salt
- 1 C lemon yogurt
- 1/2 C vegetable oil
- 2 large eggs
- 2 tsp. vanilla extract
- 1 6-8 oz. pkg. fresh blueberries, cherries or raspberries, alone or mixed (about 1 1/4 C total)
- 2 T flour
- 1/2-1 tsp. powdered lemon peel
- 3 T vanilla sugar
- 1 T cold butter
Heloise Pickeled Beets

Use a large shallow pan, dump in the sugar & cornstarch; mix well
- 3 cans beets
- 1 C sugar
- 2 level T cornstarch
- 1 C vinegar
- 24 cloves
- 3 T catsup
- 3 T cooking oil
- Dash of salt

- 1 1/2 C beet juice
Strawberry Rhubarb Compote

- 1 lb. strawberries, hulled & chopped (3 C)
- 1 C sugar
- 1 T lemon juice
- 1 lb. rhubarb, sliced 1/4" thick

Jello Salad

Prepare jello according to package directions and let cool until like white of an egg
- 1 pkg. lemon jello
- 1/2 C hot water
- 1/2 C pineapple juice
- small can pineapple, drained
- white grapes
- nuts
- small pkg. philly cream cheese
- 1/2 pint whipping cream, whipped
Broccoli Soup

In a medium saucepan heat the oleo; add onion and celery
- 2 T butter or oleo
- 1/4 C chopped onion
- 3/4 C chopped celery
- 2 – 10oz. packages frozen chopped broccoli, thawed enough to separate
- 2 C chicken broth
- 1 C milk
- Salt & pepper to taste
