Corn Muffins

Preheat oven to 400°F. Into a large bowl, mix the cornmeal, flour, baking powder, and salt
- 1 1 1 C yellow cornmeal
- 1 1 1 C whole wheat flour
- 1 1 1 T baking powder
- 1 1 1 tsp. salt
- 1 1 1 C whole milk
- 2 2 2 large eggs
- 1/2 1/2 1/2 stick butter, melted
- 1/2 1/2 1/2 C honey
Orange Fluff

Beat cottage cheese until smooth
- 1 small carton cottage cheese
- 1 regular size orange jello
- 1 can mandarin oranges, drained and halved
- 1 – 4 1/2 oz. carton cool whip
Red Devils Food Cake

Cream shortening & sugar. Add eggs
- 1/2 C shortening
- 1 1/2 C sugar
- 2 eggs
- 2 C cake flour
- 1 C buttermilk
- 2 oz. red food coloring
- 2 T cocoa
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 T vinegar
Turkey & Veggie Meatloaf Minis

Preheat oven to 350 degrees
- 1/2 cup grated onion
- 7 Tbsp ketchup, divided
- 1 1/4 lb lean ground turkey
- 3 cups shredded broccoli coleslaw, chopped
- 2 egg whites
- 1/2 cup quick cooking oats
- 2 tsp. garlic powder
- 1 tsp salt
Apple Crisp

Mix all ingredients together and bake at 375° for 30 minutes
- 1 C white sugar
- 7 T margarine
- 3/4 C flour
- 4 C apples

Pumpkin Squares (Edna Bruce)

In a bowl beat together eggs, sugar, oil and pumpkin until light and fluffy
- Frosting:
- 4 eggs
- 1 2/3 C sugar
- 1 C cooking oil
- 1 – 16 oz. can pumpkin
- 2 C flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 – 3 oz. cream cheese
- 1 stick oleo or butter
- 1 tsp. vanilla
- 2 C powdered sugar
Pumpkin Cranberry Muffins

- 2 C flour
- 3/4 C sugar
- 3 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. salt
- 1 C canned pumpkin
- 1/2 C vegetable oil
- 2 eggs
- 1 C dried cranberries
- 1/2 C chopped pecans
- coarse sugar, if desired
Pizzelle

- Base:
- 1 3/4 C all-purpose flour
- 2 tsp. baking powder
- 3 large eggs
- 3/4 C granulated sugar
- 1/2 C unsalted butter, melted
- for anise:
- 1/2 tsp. anise extract
- 2 T whole anise, pulverized
- for vanilla:
- 2 T vanilla extract OR 1 vanilla bean scraped + 1 tsp. extract
- for lemon:
- 2 1/2 T fresh lemon juice
- lemon zest to taste
Raisin Crumb Pie

Mix filling ingredients and cook 10 or 15 min
- Filling:
- 1 C raisins
- 1 C brown sugar
- 2 C water
- 1 T vinegar
- 1/4 tsp. salt
- 2 T cornstarch OR flour
- For crumbs:
- 1 C flour
- 1/2 C brown sugar
- 1/2 tsp. soda
- pinch salt
- 1/4 C oleo or butter
Old Fashioned Sugar Cookie, Buttermilk

Mix all ingredients and chill in refrigerator for one hour before rolling out
- 3 C granulated sugar
- 2 C shortening
- 2 C buttermilk
- 3 eggs
- 1/4 tsp. salt
- 4 tsp. soda
