Corn Salad

Scrape the corn kernels from the ears of corn
- 5 ears sweet corn (2 1/2 C corn kernels), husked & silk removed
- 1/2 C red onion, diced
- 3 T apple cider vinegar
- 3 T olive oil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. granulated garlic powder
- 1 red pepper, diced
- 1/2 C fresh basil, chopped
Chicken Tetrazzini

Heat oven to 350°F. Cook spaghetti in large saucepan as directed on package, omitting salt
- 1/2 lb. spaghetti, uncooked
- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 red pepper, chopped
- 2 C sliced fresh mushrooms
- 4 oz. cream cheese, cubed
- 1/4 C flour
- 1 can (14 oz.) fat-free reduced-sodium chicken broth
- 3 T grated Parmesan cheese, divided
- 1/2 C shredded mozzarella cheese

- 3/4 C sugar
- 3 T cornstarch
- 1 1/2 C scalded milk
- 1/2 tsp. vanilla extract
- 1 tsp. cognac (or liqueur of your choice)
- 1 T unsalted butter
- 1 T heavy cream
Hot Parmesan-Artichoke Dip

Heat oven to 350°. Mix all ingredients except tomato and onion
- 1 can (14 oz.) artichoke hearts, drained & chopped
- 1 C mayonnaise
- 1 clove garlic, minced
- 1 C grated parmesan cheese
- 2 T chopped tomatoes
- 2 T chopped green onion
Marshmallow Fondant

Place marshmallow fluff in large bowl
- 1 (16oz.) tub of marshmallow fluff
- 6-8 C powdered sugar
- 2 tsp. flavoring
- paste colors (optional)
Autumn Chopped Salad

In a large bowl, combine the lettuce, pears, cranberries, pecans, bacon & feta cheese
- 6-8 C chopped romaine lettuce
- 2 medium pears, chopped
- 1 C dried cranberries
- 1 C chopped pecans
- 8 slices bacon, crisp-cooked & crumbled
- 4-6 oz. feta cheese, crumbled
- poppy seed salad dressing
- balsamic vinaigrette
Parmesan Orzo with Asparagus

Cook the orzo in salted boiling water until al dente (about 9 minutes)
- 1/2 lb. orzo pasta
- 1-2 boneless skinless chicken breasts
- 1 bunch asparagus
- Zest of 1 lemon
- 1/2 c. shredded Parmesan cheese
- 1/4 c. pasta water
- 2 cloves garlic, finely minced
- 4 T. olive oil, divided
- Salt and pepper to taste
Salad Dressing

Place all ingredients in a mason jar and shake to combine
- 1/3 C olive oil
- 3 1/2 T vinegar (white, cider, red wine, balsamic, etc.)
- 2 T grated Romano cheese
- 1 tsp. black pepper (or to taste)
- 3/4 tsp salt (or to taste)
- 1/4 tsp. granulated garlic (or to taste)
Rhuberry Jam

Simmer rhubarb, raspberries and water over medium heat for 20 minutes
- 11 C chopped rhubarb
- 3 C mashed black raspberries (could use a little less)
- 1 C water
- 5 C sugar
- 1 lemon, zested and juiced
- 1/3 C minced crystallized ginger
- 1 tsp. ground ginger OR 1 T grated fresh ginger
