Pecan Pie

Mix all together, folding in pecans last
- 3 eggs slightly beaten
- 1 C Karo (blue label)
- 1/8 tsp. salt
- 1 C sugar
- 1 tsp. vanilla
- 2/3 C pecan meats
Ricotta Cookies

These Ricotta Cookies are glazed with a sweet, citrusy orange glaze that looks beautiful and tastes just as good
- COOKIES:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- pinch of kosher salt
- 1 cup sugar
- 1/2 cup (1 stick) unsalted butter, softened to room temperature
- 2 eggs
- 1 (8-ounce) tub fresh whole-milk ricotta (drain any excess liquid, if necessary)
- 1/2 teaspoon vanilla extract
- zest of 1 large orange, about 2 teaspoons, or zest of lemon
- GLAZE:
- 1/4 cup orange juice
- 1 teaspoon orange zest
- 2 1/2 cups powdered sugar, sifted
Greek Pita

Mix hummus, tabbouleh, cucumber and feta
- whole wheat pita
- 2 T hummus
- 2 T tabbouleh
- 2 T cucumber
- 1 T feta
Rhubarb Custard Pie

Mix rhubarb, sugar and flour
- 3 C finely cut rhubarb
- 1 1/4 C sugar
- 3 rounded T flour
- 2 eggs, beaten
- Butter
- Cinnamon
Date Pudding

Put dry ingredients together then add eggs
- 3 eggs, beaten yolks and whites separately
- 3/4 C sugar
- 1/2 C nuts, cut coarse
- 1 C dates, cut up
- 1 heaping T flour
- 1 tsp. vanilla
- 1 tsp. baking powder
- Whipped cream
Spring Cake

Preheat oven to 350°. Mix together cake mix, eggs, oil and madarin oranges
- Icing:
- 1 yellow cake mix
- 4 eggs
- 1/4 C oil
- 1 can (11 oz.) mandarin oranges, undrained
- lg. container cool whip
- small container instant vanilla pudding
- 1 can crushed pineapple, drained well
Chicken and Cheese Lasagna Roll-Ups

In medium bowl, combine chicken, cheeses, milk, and pepper
- 3 C chopped or shredded cooked chicken
- 1/4 C milk
- 1 cup Ricotta or cottage cheese
- 1/8 tsp. white pepper
- 1/4 C crumbled feta cheese
- 8 lasagna noodles, cooked and drained
- 1/4 C grated Parmesan cheese
- 2 C spaghetti sauce
Milk Pie

Preheat oven to 350° Mix in unbaked pie crust (try to dissolve sugar)
- 2 rounded T flour
- 3/4 C sugar
- 1 C evaporated milk
- pie crust
- butter
- cinnamon
Chocolate Fudge

Melt chocolate. Stir in sugar, corn syrup, milk and salt
- 2 -1 oz. squares bitter chocolate
- 2 C sugar
- 1/4 tsp. salt
- 2/3 C milk
- 2 T butter
- 1 tsp. light corn syrup
Peanut Butter Balls (E.B.)

Mix all together (I use my hands) and shape into balls
- 1 lb. chunk or smooth style peanut butter
- 1 stick of softened oleo
- 3/4 box of powdered sugar
- 4 C rice krispies
- 12 oz. semi-sweet chocolate bits
